Asian influenced flavor. Another recipe from Big Daddy's House on the Food Network. Everything he makes looks SO delicious! I can't wait to try this! On the show, he only prepared one Cornish hen, so adjust your times accordingly for multiple hens. Cooking time includes deep-frying and baking time.

Time 41m

Yield 1 cornish hen, 1-2 serving(s)

Number Of Ingredients 6

1/2 cup hoisin sauce
1/4 cup honey
1/4 cup chopped scallion
crushed red pepper flakes, to taste
1 Cornish hen
vegetable oil, for deep frying

Steps:

  • Pre-heat oil in a pot large enough to fit a Cornish hen comfortably, to about 350 degrees.
  • Thoroughly wash and pat Cornish hen dry to avoid unnecessary spatter, and carefully ease into hot oil.
  • Cook for 8-10 minutes on each side until you see that it is turning slightly golden brown around the edges and crispy.
  • Remove and place on cooling rack.
  • In a small bowl, prepare glaze by mixing together first 4 ingredients, adding red pepper flakes to your heat preference. Baste entire hen liberally with the glaze.
  • Pop in pre-heated oven at 350 degrees for about 8 minutes or until it gets crispy.
  • Flip over, and re-baste bottom of hen, and put back in oven for another 8 minutes to crisp up the other side.
  • Let rest before serving. You can cut into quarters for 2 servings, or serve whole.
  • Serve alongside steamed veggies and/or Jasmine rice for a complete meal!

Tips:

  • Choose the right Cornish hens: Look for hens that are plump and have a moist, smooth skin. Avoid hens that are too thin or have any bruises or blemishes.
  • Prepare the hens properly: Rinse the hens inside and out with cold water and pat them dry with paper towels. Remove any excess fat from the hens, but leave the skin intact.
  • Make sure the glaze is thick and sticky: The hoisin glaze should be thick enough to coat the hens evenly. If the glaze is too thin, it will not adhere to the hens and will not caramelize properly.
  • Cook the hens over indirect heat: This will help to prevent the hens from drying out. If you are using a charcoal grill, place the hens on the grate above the coals. If you are using a gas grill, turn off the burners on one side of the grill and place the hens on that side.
  • Baste the hens frequently: Basting the hens with the hoisin glaze will help to keep them moist and flavorful. Baste the hens every 15-20 minutes, or more often if necessary.

Conclusion:

Hoisin-glazed Cornish hens are a delicious and easy-to-make dish that is perfect for any occasion. By following these tips, you can ensure that your hens turn out perfectly every time.
