Steps:

  • Combine five-spice powder, paprika, salt, garlic, pepper, and mustard in a bowl. Rub over both sides of chicken.

12 ounces boneless, skinless chicken breast, cut across the grain in 1/4-inch-thick slices
1 tablespoon egg white, lightly beaten
2 teaspoons cornstarch
1 1/2 teaspoons plus 1 tablespoon rice wine or dry sherry
Salt to taste
2 tablespoons hoisin sauce
1 teaspoon low-sodium soy sauce
2 tablespoons peanut oil, rice bran oil or canola oil
1 bunch Chinese broccoli (about 1 pound), ends trimmed
1 tablespoon minced ginger
2 fat garlic cloves, minced
1/2 teaspoon red pepper flakes
8 shiitake mushrooms, stems removed, sliced thin
Rice, whole grains or noodles for serving

Steps:

  • In a large bowl, stir together the egg white, cornstarch, 1 1/2 teaspoons of the rice wine or sherry, salt to taste and 1 1/2 teaspoons water. When you can no longer see any cornstarch, add the chicken and stir together until coated. Cover the bowl and place in the refrigerator for 30 minutes
  • Bring 2 quarts of water to a rolling boil in a large saucepan and add the Chinese broccoli. Boil 2 minutes, until it is just crisp-tender, and transfer it to a bowl of cold water. Do not drain the water from the pot. Drain the broccoli and dry on paper towels. Cut into 2-inch lengths
  • Combine the remaining rice wine, the hoisin sauce and the soy sauce in a small bowl and set near your wok
  • Bring the water in the pot back to a boil, add 1 tablespoon of the oil and turn the heat down so that the water is at a bare simmer. Carefully add the chicken to the water, stirring so that the pieces don't clump. Cook until the chicken turns opaque on the surface but is not cooked through, about 1 minute. Drain in a colander
  • Heat a 14-inch flat-bottomed wok or 12-inch steel skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in the remaining oil by adding it to the sides of the pan and swirling the pan, then add the garlic, ginger and red pepper flakes and stir-fry for no more than 10 seconds. Add the mushrooms, chicken, broccoli, hoisin sauce mixture and salt to taste. Stir-fry for 1 to 2 minutes, until the chicken is cooked through, and serve with grains or noodles

1/2 bunch scallions, chopped

1 (4-inch) ball prepared dough, at room temperature
2 tablespoons olive oil
1/4 cup hoisin sauce (available in the Asian section of most grocery stores)
2 grilled skinless, boneless chicken breasts, diced or equivalent amount of store-bought BBQ chicken, or any left-over chicken
4 scallions, finely sliced
2/3 lightly-packed cup cilantro leaves, stems removed before measuring
1/2 red bell pepper, seeds and membranes discarded, sliced into paper-thin strips
1 cup grated mozzarella
Salt and freshly ground pepper

Steps:

  • Sprinkle your rolling surface with a handful of flour or cornmeal. Place dough directly in the middle of the surface. Roll dough out gently 1/4-inch thick, into either a 12-inch rectangle or circle. Brush both sides with olive oil and set aside until ready to grill.
  • Place dough in the center of the cooking grate, directly over the heat for one to three minutes, until the crust is well marked and browned. 1 tablespoon cooking oil
1/4 cup soy sauce
1/4 cup honey
1/4 cup hoisin sauce

1/4 cup toasted sesame seeds
4 cups hot cooked brown rice (or white rice)
1/4 cup sliced scallion, green tops included

Steps:

  • In large skillet over medium high heat, place cooking oil. Add chicken and sauté until browned, about 3-4 minutes per side.

1 3/4 lbs chicken breasts, defatted
1/2 cup soy sauce
3 tablespoons dry sherry
3 tablespoons cornstarch
1/4 cup vegetable oil
1/4 cup scallion, green and white parts, sliced diagonally
2 (16 ounce) bags stir fry vegetables
1 lb whole mushroom
1/4 cup fresh ginger, peeled and minced
1/2 cup garlic, minced
4 whole green bell peppers, seeded and julienned
1/2 cup hoisin sauce
1/2 cup dry sherry
2 teaspoons fresh ground black pepper
2 1/2 tablespoons sesame oil

Steps:

  • In a mixing bowl, combine soy sauce, sherry and cornstarch. Add the chicken and toss until coated. Let chicken stand in marinade for at least 10 minutes (while getting ingredients in bowls).
  • In a sprayed+oiled wok or saute pan, heat the vegetable oil over high heat until just smoking.
  • Add the scallions and ginger, and stir-fry for about 30 seconds.
  • Add the chicken, reserving any remaining marinade, and stir-fry for about 5 minutes, until the chicken is just done.
  • Add the vegetables+mushrooms, green peppers and stir-fry for another minute.
  • Add the hoisin sauce, sherry, salt and black pepper, and combine.
  • Add sesame oil to the marinade remaining in the bowl, stir it, and add to the wok.
  • Toss to blend well and BOIL, then simmer until slightly thickened. TASTE? Remove from the heat, drizzle with the sesame oil .

1 teaspoon sesame oil
1 1/2 cups finely diced white onions
2 tablespoons minced garlic

1/2 cup whole milk
Unsalted butter, for greasing
2 pounds ground chicken (see Cook's Note)
2 tablespoons low-sodium soy sauce
2 large eggs, lightly beaten
2/3 cup hoisin sauce
1/3 cup blackberry jam
Toasted sesame seeds, for garnish

Steps:

  • Preheat the oven to 375 degrees F. Grease a 9-by-5-inch loaf pan with butter (see Cook's Note).
  • Heat the olive oil and sesame oil in a medium skillet over medium-low heat until warm. Add the onions, garlic, ginger and a pinch each of salt and pepper. Cook, stirring occasionally, until the onions are translucent, about 8 minutes. Transfer the mixture to a large bowl and let cool to room temperature.
  • Meanwhile, stir together the panko and milk in a small bowl and set aside for 5 minutes, then transfer to the large bowl.   • Remove the meatloaf from the oven and brush generously with the hoisin glaze. Return to the oven and continue to bake until the meatloaf reaches an internal temperature of 165 degrees F, about 20 minutes. Remove from the oven and let the meatloaf sit for 5 to 10 minutes.
  • Sprinkle sesame seeds over the meatloaf then slice and serve topped with the remaining hoisin glaze.

4 boneless skinless chicken breast halves (about 2 pounds)
Kosher salt and freshly ground black pepper
3/4 cup hoisin sauce (8 1/2 ounce jar)
1 bunch broccoli, stems thinly sliced and top cut into large florets (1 pound, 5 ounces)

Steps:

  • Preheat oven to 400 degrees F and spray a baking dish with cooking spray.
  • Put the chicken in the baking dish and season with salt and pepper. Pour the hoisin sauce over the chicken and turn the chicken to coat evenly. Bake until opaque and cooked through, about 18 to 20 minutes.
  • Meanwhile, pour an inch or more of water in a skillet or wok and bring to a boil over medium-high heat. Place the broccoli stems in a bamboo or collapsible steamer. Set the steamer over the boiling water, cover, and cook 2 to 3 minutes. Add the florets and continue to cook just until the vegetables are crisp tender and bright green, 2 to 3 minutes more. Season with the salt and pepper.
  • Divide the chicken and broccoli among 4 plates and serve.

1/4 cup olive oil
8 ounces hoisin sauce (found in international section in grocery store)
4 to 5 cloves minced garlic
1 teaspoon black pepper
1/2 teaspoon white pepper
1 teaspoon salt
2 tablespoons cooking sherry
12 to 16 skewers (if wooden, soak in water for 15 to 20 minutes)
1/2 cup roasted white and black sesame seeds
1 ripened papaya
1/2 lime, juiced
Mixed greens
1/2 cup fresh large diced tomatoes
3/4 cup balsamic vinegar
1/4 cup hoisin sauce
2 tablespoons soy sauce
1 small Maui sweet onion - sliced
2 cloves garlic
4 -6 sprigs fresh basil leaves
1 teaspoon crushed red pepper flakes
1 1/4 cups extra-virgin olive oil
1 teaspoon salt
1 tablespoon sugar
Freshly cracked pepper

Steps:

  • For the Chicken Satay: Combine the first 8 ingredients to coat chicken. Let marinate for 2 hours. Skewer 3 to 4 cubes of chicken per stick. Sprinkle chicken with sesame seeds. Set aside before grilling.
  • For the Papaya Salad: Cut papaya in half, seed and skin. Cut papaya into quarters, then cut into thin slices. Squeeze the lime juice over the papaya and arrange on plate over mixed greens.
  • For the "Hoisin" Balsamic Vinaigrette: Combine the first set of ingredients in blender. With blender on, emulsify by adding oil slowly until well blended. Add salt, sugar and pepper, to taste. Set aside.

2 tablespoons vegetable oil
1 tablespoon finely chopped peeled fresh ginger
1/2 teaspoon salt
2 scallions, chopped (1/4 cup)
2 skinless boneless chicken breast halves (about 1 lb total), cut into 1/2-inch pieces
1 (8-oz) can sliced water chestnuts, rinsed and coarsely chopped
1/4 cup bottled hoisin sauce (preferably Lee Kum Kee, House of Tsang, or Koon Chun brand)
1 1/2 teaspoons Worcestershire sauce
1 teaspoon rice vinegar (not seasoned)
1/2 cup pine nuts (2 1/2 oz)
12 large red- or green-leaf lettuce leaves

Steps:

  • Heat a wok or a 12-inch heavy skillet (not nonstick) over moderately high heat until just smoking, then add oil. Add ginger, salt, and 2 tablespoons scallions and stir-fry until ginger is fragrant, about 45 seconds. Add chicken and stir-fry until just cooked through, about 2 minutes. Add water chestnuts, hoisin sauce, Worcestershire sauce, vinegar, and pine nuts and stir-fry until heated through, about 1 minute. 1/3 cup hoisin sauce
2 tablespoons rice wine vinegar
2 tablespoons extra-virgin olive oil, plus more for brushing
1 teaspoon grated peeled ginger
Kosher salt and freshly ground pepper
8 skin-on, bone-in chicken thighs (2 to 2 1/4 pounds)
4 plums, halved and pitted
6 cups baby arugula
Juice from 1/2 lemon
2 tablespoons chopped roasted salted cashews

Steps:

  • Preheat a grill to medium. Combine the hoisin sauce, vinegar, 1 tablespoon olive oil, the ginger, 1/2 teaspoon salt and 1/4 teaspoon pepper in a bowl. Remove 3 tablespoons of the mixture to a separate large bowl; add the chicken and toss to coat. Add the plums to the remaining hoisin mixture and toss to coat.

2 1/4 teaspoons salt, divided
1 tablespoon minced gingerroot
4 garlic cloves, chopped, divided
3 tablespoons peanut oil or 3 tablespoons vegetable oil, divided
6 green onions, chopped, with whites and greens divided
1 1/2 cups jasmine rice, rinse well and drained
2 cups low sodium chicken broth
1/4 cup lemon juice, divided
2/3 cup dried cherries, chopped (cab sub dried cranberries)
1 tablespoon toasted sesame oil
1/3 cup rice wine vinegar
1/4 cup hoisin sauce
1 1/2 tablespoons honey, divided
1 large lemon, zest of
2 small lemons, zest of
1/2 teaspoon red pepper flakes, divided
2 teaspoons black sesame seeds
1 lb fresh asparagus, trimmed and cut into 2 inch pieces
1/2 cup chopped fresh cilantro, divided
1/3 roasted salted almond, roughly chopped

Steps:

  • Mix chicken, one teaspoon salt, ginger, and half of the garlic; set aside.
  • In medium saucepan over medium heat, warm one tablespoon peanut or vegetable oil. Stir in green onion whites, remaining garlic and jasmine rice. Cook, stirring frequently, for 8 minutes or until beginning to toast. Add broth, half of the lemon juice and one teaspoon salt; bring to a boil. Cover, reduce heat to low, and cook 15 minutes. Uncover, fluff with fork, stir in dried cherries or craisins, sesame oil and remaining green onions. Set aside.
  • In large frying pan over medium high heat, warm one tablespoon peanut or vegetable oil. Add chicken and cook, stirring frequently, for 6 minutes or until no longer pink on the outside.
  • In small bowl, stir together vinegar, Hoisin, one tablespoon honey, remaining lemon juice, half of the lemon zest and 1/4-teaspoon red pepper flakes. Add sauce to chicken in pan and continue cooking for 10 additional minutes on medium. Raise heat to high and cook for 2-4 minutes until sauce on chicken is dark and has thickened. Sprinkle chicken with black sesame seeds. Remove pan from heat, set aside and keep warm.
  • In second large frying pan, warm remaining peanut oil over high heat. Add asparagus, remaining honey, red pepper and remaining salt. Cook, stirring frequently, for 2-4 minutes, or until asparagus is tender.
  • To serve, plate rice on serving platter. Top with half of the cilantro, almonds, and roasted asparagus, Top with chicken pieces. Sprinkle with remaining cilantro and lemon zest.
