Time 1h

Yield 4 to 6 servings

Number Of Ingredients 11

1 1/2 cups hoisin sauce
1/4 cup rice vinegar or white vinegar
1 1/2 pounds flank steak, sliced thin against the grain
2 cups mayonnaise
1/4 cup Sriracha sauce
2 carrots, julienned
1 small head cabbage, sliced in thin strips
1 medium red onion, sliced thin
Kosher salt and freshly ground black pepper
4 tablespoons (1/2 stick) unsalted butter
Four 6-inch French baguettes or long rolls, halved lengthwise

Steps:

  • For the steak: In a medium bowl, whisk together the hoisin sauce and vinegar. Add the flank steak and marinate for 30 minutes.
  • For the spicy slaw: Mix the mayonnaise and Sriracha together in a small bowl. Combine the carrots, cabbage and red onions in a large bowl. Add the spicy mayonnaise and combine thoroughly. Season with salt and pepper. Chill until using.
  • For the toasted baguettes: Heat a pan over medium-low heat. Butter the baguette halves, add them to the pan and toast until golden brown. Remove the bread from the pan, but leave the pan on the heat.
  • Add the flank steak to the pan and cook for 3 to 4 minutes, adding a splash of water to the pan if the sauce is too thick.
  • Divide the steak among the baguette bottoms, top with some spicy slaw and the baguette tops and cut in half. Enjoy!

GRILLED HOISIN BEEF

Grilled Hoisin Beef image

The (underrated) hoisin sauce is a thickened, fermented soy-sauce-like substance, flavored with chilies, garlic, vinegar, sugar, and, of course, exotic spices. It makes a great marinade. And unless you horribly overcook it, this skirt steak is juicy and tender.

Yield 2

Number Of Ingredients 13

1 (1 pound) beef skirt steak
⅓ cup hoisin sauce
3 tablespoons Chinese vinegar (or sherry vinegar)
1 tablespoon soy sauce
2 teaspoons hot sauce
2 teaspoons sesame oil
1 tablespoon grated fresh ginger root
4 cloves garlic, finely minced
1 tablespoon packed brown sugar
1 teaspoon salt
½ teaspoon freshly ground black pepper
1 green onion, light parts only, minced
Toasted sesame seeds

Steps:

  • Whisk hoisin sauce, vinegar, soy sauce, hot sauce, sesame oil, grated ginger, garlic, brown sugar, salt, and pepper together in a large mixing bowl.
  • Cut skirt steak crosswise into about 4 or 5 smaller pieces. Transfer steak into marinade and toss until all pieces are evenly coated. Cover with plastic wrap. Refrigerate; marinate at least 2 hours and up to 12 hours.
  • Line a baking pan with paper towels. Transfer pieces of steak to the paper towels and mop off some of the marinade.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Transfer steak pieces to grill. Cook to medium rare or medium, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read between 130 and 135 degrees F (about 54 degrees C). Thinner pieces might finish earlier. Transfer steak to a warm plate. Let rest for a few minutes.
  • Transfer steak to a warm serving platter and pour any accumulated juices over skirt steak. Sprinkle with sesame seeds and sliced green onions.

Tips:

  • To make the hoisin BBQ sauce, whisk together all of the ingredients in a small bowl until well combined. Set aside.
  • To make the pineapple salsa, combine all of the ingredients in a medium bowl and stir to combine. Set aside.
  • To cook the steak, heat a large skillet over medium-high heat. Add the steak strips and cook for 5-7 minutes per side, or until cooked to your liking. Remove from heat and let rest for 5 minutes before slicing.
  • To assemble the skewers, thread the steak strips, pineapple chunks, and red onion wedges onto skewers. Brush the skewers with hoisin BBQ sauce and grill for 2-3 minutes per side, or until the sauce is caramelized and the steak is heated through.
  • Serve the skewers with rice, noodles, or vegetables, and enjoy!
