HOISIN-GLAZED ROAST CHICKEN

Hoisin-Glazed Roast Chicken image

Hoisin sauce is a popular Chinese condiment made from fermented soybean paste and seasonings such as garlic, chile peppers and sesame. Here, it's combined with other pantry staples like soy sauce, rice wine and Sichuan peppercorns and used to marinate and then baste roast chicken, dialing up the savory richness of the meat and infusing it with a wonderfully sweet yet salty flavor.

Provided by Food Network Kitchen

Time 1h15m

Yield 6-8

Number Of Ingredients 11

1/4 cup low-sodium soy sauce
2 tablespoons Chinese rice wine
2 tablespoons hoisin sauce
2 tablespoons honey
2 tablespoons peanut oil
1 star anise pod, broken into points
1/2 teaspoon Szechuan peppercorns, crushed with a knife
2 tablespoons chopped fresh cilantro (stems and leaves)
3 scallions, finely chopped
3 cloves garlic, coarsely chopped
2 quartered chickens (3 to 3 1/2 pounds each)

Steps:

  • Heat the peanut oil in a large skillet over high heat. Add the star anise and peppercorns; cook, stirring, until toasted, about 10 seconds. Add the cilantro, scallions and garlic and cook 30 seconds. Add the soy sauce mixture and simmer over medium heat until slightly reduced, 2 to 3 minutes. Transfer to a large bowl and let cool, then add the chicken and toss. Cover and refrigerate 4 hours.
  • Transfer the chicken to a rack set in a roasting pan (reserve the marinade). Refrigerate the chicken, uncovered, about 3 hours to dry out the skin.
  • Position a rack in the upper third of the oven; preheat to 400 degrees F. Pour 1/4 inch of water and the reserved marinade into the roasting pan. Roast the chicken 20 minutes. Baste with the pan juices, then reduce the oven temperature to 350 degrees F and continue roasting until the skin is glazed and a thermometer inserted into a breast registers 160 degrees F, 20 to 25 more minutes. Transfer the chicken (on the rack) to a board. Pour the pan juices into a skillet; simmer over medium-high heat until reduced by half, about 5 minutes. Drizzle over the chicken.
  • Whisk the soy sauce, rice wine, hoisin sauce and honey in a bowl; set aside.

HOISIN AND CRANBERRY ROASTED CHICKEN BREAST

Hoisin and Cranberry Roasted Chicken Breast image

This recipe uses bone in skinless chicken breast (for best flavor) A serving for this recipe is half a breast....they seem to be so big in the packages I get. From Eating Well.

Provided by Lynette !

Categories     Chicken

Time 50m

Number Of Ingredients 11

2 chicken breasts, bone in, skinless
1/4 tsp chinese five spice powder
1/4 tsp salt
4 Tbsp all purpose flour, divided
2 Tbsp canola oil
1 large shallot, minced
1/4 c dry sherry, (not cooking sherry...too much sodium!)
1/2 c cranberries, coarsely chopped, fresh or frozen (not dried, sweetened)
1 1/4 c reduced sodium chicken broth, divided
3 Tbsp hoisin sauce
1 tsp brown sugar

Steps:

  • 1. Preheat the oven to 450°F.
  • 2. Cut each chicken breast in half on the diagonal to get 4 portions about equal in weight. (Two will be smaller but thicker, the other two larger, but thinner). Sprinkle the chicken with the five spice powder and salt.
  • 3. Place 3 tablespoons flour in a shallow dish. Dredge both sides of the chicken in the flour.
  • 4. Heat the oil in a large skillet over medium heat. Add the chicken, skinned-side down, and cook until brown on the bottom, about 6 minutes. Remove from the heat and transfer the chicken, skinned-side up, to a baking sheet. Bake until an instant read thermometer inserted into the thickest part of the breast registers 165°, 15 to 20 minutes.
  • 5. Return the skillet to medium heat, add shallot and cook, stirring, until fragrant, about 1 minute. Add the sherry and cranberries; cook until the sherry is reduced by about half and the cranberries are beginning to soften, about 1 minute. Add 1 cup broth; brink to a boil and cook, stirring occasionally, until the cranberries are very soft, about 3 minutes more.

Tips:

  • Use a variety of vegetables. This will give your chicken dish a more complex flavor and texture. Some good options include carrots, celery, onions, potatoes, and Brussels sprouts.
  • Don't overcrowd the pan. If you overcrowd the pan, the chicken and vegetables will not cook evenly. Make sure there is enough space between the pieces of chicken and vegetables so that they can all cook evenly.
  • Roast the chicken at a high temperature. This will help to create a crispy skin and a juicy interior. A good rule of thumb is to roast the chicken at 400 degrees Fahrenheit for 20-25 minutes.
  • Use a meat thermometer to check the internal temperature of the chicken. The chicken is done cooking when the internal temperature reaches 165 degrees Fahrenheit.
  • Let the chicken rest before carving. This will help the juices redistribute throughout the chicken, making it more tender and flavorful.

Conclusion:

Hoisin and cranberry roasted chicken breast is a delicious and easy-to-make dish that is perfect for a weeknight meal. The hoisin sauce and cranberry sauce give the chicken a sweet and savory flavor that is sure to please everyone at the table. This dish can be served with roasted vegetables, mashed potatoes, or rice.
