HOBO BEEF AND VEGETABLE SOUP

Hobo Beef and Vegetable Soup image

My grandma called this soup Hobo Soup. She said it was something they made way back when, out of whatever they had available in their garden and shelves. It is a large dish (they were a family of 10), so have a big pot or slow cooker! I have halved it and honed it a little since most of us use a grocery now and don't have 8 kids.

1 ½ tablespoons chopped fresh parsley
½ teaspoon celery seed
2 bay leaves
1 pound lean ground beef
1 onion, chopped
1 clove garlic, minced, or to taste
1 (14.5 ounce) can stewed tomatoes

  • Stir the potatoes, corn, green beans, and peas into the soup in the slow cooker, and add the beef mixture. Stir everything together, cover, and set the slow cooker on High. Cook for 4 hours.

  • Choose the right cut of beef. Chuck roast, brisket, and short ribs are all good choices for this soup. These cuts are tough, but they become tender when cooked slowly in liquid.
  • Brown the beef before adding it to the soup. This will help to develop flavor and prevent the beef from becoming dry.
  • Use a variety of vegetables. This will add flavor, color, and nutrients to the soup. Some good options include carrots, celery, onions, potatoes, and tomatoes.
  • Season the soup to taste. Salt, pepper, and garlic powder are all good starting points. You can also add other herbs and spices, such as thyme, rosemary, or bay leaves.
  • Let the soup simmer for at least 1 hour. This will allow the flavors to meld and the beef to become tender.
  • Serve the soup hot. You can garnish it with chopped parsley or chives, if desired.
