Yield 8 serving(s)

Number Of Ingredients 35

1 bag 7 bean mix, rinsed and soaked over night or 1 bag 15 bean mix
7 cups water
1 ham bone
1 bay leaf
1 hot chili peppers or 1 dried chili
2 teaspoons mixed herbs
1/2 cup dried parsley
1/4 cup summer savory
1/4 cup cumin seed
2 teaspoons fennel seeds
2 teaspoons caraway seeds
2 teaspoons dill seeds
2 teaspoons cracked coriander seeds
2 teaspoons sweet basil
2 teaspoons dried chervil
1 teaspoon celery seed
1 teaspoon thyme
1 teaspoon lemon thyme
1 teaspoon sage
1 teaspoon oregano
1 teaspoon rosemary
1 teaspoon lavender
1 teaspoon sweet marjoram
1 teaspoon cayenne pepper
1 large onion, chopped
3 cloves garlic, minced
salt and pepper
1 (16 ounce) can diced tomatoes
1 carrot, sliced
1 stalk celery, sliced with leaves
2 medium potatoes, diced
4 ounces green beans, trimmed and chopped
1 -3 teaspoon Worcestershire sauce
2 drops honey
minced fresh green herbs

Steps:

  • Boil the drained, soaked beans with the water, bone, bay leaf and chili in a large pot.
  • Reduce to a simmer and simmer for 3 hours.
  • Add the remaining ingredients and simmer for 1 hour longer.
  • This was a requested recipe and in my comments I said that if you dont have all the ingredients for the herb mix dont worry about it.
  • Shake in what you got.
  • If you go out and buy everything required in the spices-you're looking at around 50 bucks!

Tips:

  • Soak the beans overnight: This will help to soften them and reduce the cooking time.
  • Use a variety of beans: This will give your soup a more complex flavor and texture. Some good options include pinto beans, black beans, kidney beans, and navy beans.
  • Add vegetables and herbs: This will help to boost the flavor and nutrition of your soup. Some good options include onions, carrots, celery, garlic, thyme, and bay leaves.
  • Use a good quality broth: This will make a big difference in the flavor of your soup. If you don't have time to make your own, you can use a store-bought broth.
  • Season to taste: Add salt, pepper, and other spices to taste. You can also add a splash of vinegar or lemon juice for a bit of brightness.

Conclusion:

Hillbilly bean soup is a hearty, flavorful, and budget-friendly meal that is perfect for a cold winter day. It is also a great way to use up leftover beans and vegetables. With a few simple ingredients and a little bit of time, you can make a delicious and satisfying soup that the whole family will enjoy.
