These muffins are a great low-fat moist muffin. I used 1/2 cup brown sugar instead of the 2/3 cup called for and I felt they were sweet enough. I also added chopped apples.

Steps:
- Preheat oven to 400°F.
- Stir together: bran, flour, soda and baking powder.
- Then stir in raisins and set aside.
- Blend milk, molasses, oil and egg.
- Add to dry ingredients and stir JUST UNTIL MOISTENED.
- Spoon into greased muffin tins and bake for 15 minutes or until muffins pull away from sides of cups.
Tips:
- Choose the right bran. There are two main types of bran: wheat bran and oat bran. Wheat bran has a higher fiber content than oat bran, but oat bran is more soluble and may be easier to digest.
- Use buttermilk or yogurt. These ingredients will help to keep your muffins moist and tender. You can also use milk, but the muffins may be a little drier.
- Don't overmix the batter. Overmixing can make the muffins tough. Mix just until the ingredients are combined.
- Fill the muffin cups only 2/3 full. This will help to prevent the muffins from overflowing.
- Bake the muffins at a moderate temperature. A temperature of 375 degrees Fahrenheit is ideal. If you bake the muffins at a higher temperature, they may brown too quickly and the inside may not cook through.
- Let the muffins cool before serving. This will help to prevent them from falling apart.
Conclusion:
High-fiber bran muffins are a delicious and healthy way to start your day. They are packed with fiber, which is essential for a healthy digestive system. They are also a good source of protein, vitamins, and minerals. With so many delicious variations to choose from, there is sure to be a bran muffin recipe that everyone will enjoy.
