HIDDEN VEGGIE SLOPPY JOES

Hidden Veggie Sloppy Joes image

From Cooking Light, Jan 1997. Original calls for 6 oz. ground round and 6 oz turkey breast. I have had really good luck feeding this to toddlers and veggie-phobic adults! Feel free to play with the veggies to your own preference; tonight I made these with 1 c mushroom and 1 c finely diced zucchini squash. I also prefer balsamic or cider vinegar here to the red wine. Finally, this does tend to turn out pretty "saucy", so if you like your joes thicker you might consider adding a bit of tomato paste. Enjoy!

VEGAN SLOPPY JOES

Vegan Sloppy Joes image

Wonderfully sweet and tangy Sloppy Joes that I grew up with, but veganized! You won't find any bell peppers here. This is far more wholesome than most Sloppy Joe recipes. The spices can be easily adjusted. These are also great with sweet potato fries! Try this for a quick and economical weeknight meal.

Tips:

  • Choose the right ground beef. For the best sloppy joes, use a ground beef that is at least 80% lean. This will help to keep the sloppy joes from being too greasy.
  • Don't overcook the ground beef. Overcooked ground beef is tough and dry. Cook the ground beef until it is just cooked through, about 5 minutes.
  • Use a variety of vegetables. The more vegetables you use, the more nutritious the sloppy joes will be. Some good vegetables to use include onions, peppers, carrots, and zucchini.
  • Grate the vegetables finely. This will help them to blend in with the ground beef and make the sloppy joes more kid-friendly.
  • Use a flavorful sauce. The sauce is what really makes sloppy joes special. Use a sauce that is flavorful and has a little bit of a kick. Some good options include ketchup, barbecue sauce, and chili sauce.
  • Serve the sloppy joes on a bun. Sloppy joes are traditionally served on a bun. However, you can also serve them on a tortilla, a slice of bread, or even a bed of rice.

Conclusion:

Hidden veggie sloppy joes are a delicious and nutritious way to get your kids to eat their vegetables. They are easy to make and can be tailored to your family's taste preferences. So next time you are looking for a quick and easy meal, give hidden veggie sloppy joes a try.
