2 large eggs
¾ cup shredded carrot

Tips:

  • Select lean ground beef. This will help reduce the overall fat content of the meatloaf.
  • Finely chop the vegetables. This will help them blend in with the other ingredients and ensure that they cook evenly.
  • Use a variety of vegetables. This will add flavor and texture to the meatloaf, and also help to sneak in extra nutrients.
  • Don't overmix the meatloaf mixture. Overmixing can make the meatloaf tough.
  • Shape the meatloaf into a loaf shape and place it in a loaf pan. This will help it to cook evenly.
  • Bake the meatloaf at 350 degrees Fahrenheit for 1 hour, or until a meat thermometer inserted into the center reads 160 degrees Fahrenheit.
  • Let the meatloaf rest for 10 minutes before slicing and serving. This will help the juices to redistribute and make the meatloaf easier to slice.

Conclusion:

Hidden veggie meatloaf is a delicious and nutritious way to get your family to eat more vegetables. By sneaking vegetables into the meatloaf, you can easily add extra servings of fruits and vegetables to your family's diet. This recipe is also a great way to use up leftover vegetables.
