Time 30m

Yield 6 servings

Number Of Ingredients 16

Vegetable oil, for deep-frying
1 pound clean squid with tentacles, bodies cut into 1/3- to 1/2-inch-thick rings
2 cups all-purpose flour
2 tablespoons dried parsley
Salt and freshly ground black pepper
2 lemons, cut into wedges
1 cup simple tomato sauce, recipe follows or jarred marinara sauce, warmed
1/2 cup extra-virgin olive oil
1 small onion, chopped
2 cloves garlic, chopped
1 stalk celery, chopped
1 carrot, chopped
Sea salt and freshly ground black pepper
2 (32-ounce) cans crushed tomatoes
2 dried bay leaves
4 tablespoons unsalted butter, optional

Steps:

  • Pour enough oil into a heavy large saucepan to reach the depth of 3 inches. Heat over medium heat to 350 degrees F. Mix the flour, parsley, salt, and pepper in a large bowl. Working in small batches, toss the squid into the flour mixture to coat. Carefully add the squid to the oil and fry until crisp and very pale golden, about 1 minute per batch. Using tongs or a slotted spoon, transfer the fried calamari to a paper-towel lined plate to drain.
  • Place the fried calamari and lemon wedges on a clean plate. Sprinkle with salt. Serve with the marinara sauce.
  • In a large casserole pot, heat oil over medium high heat. Add onion and garlic and saute until soft and translucent, about 5 to 10 minutes. Add celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 to 10 minutes. Add tomatoes and bay leaves and simmer uncovered on low heat for 1 hour or until thick. Remove bay leaves and check for seasoning. If sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors.
  • Add 1/2 the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce.
  • If not using all the sauce, allow it to cool completely and pour 1 to 2 cup portions into freezer plastic bags. This will freeze up to 6 months.

HG'S FAUX-FRIED & FABULOUS CALAMARI - WW POINTS = 4

Hg's Faux-Fried & Fabulous Calamari - Ww Points = 4 image

For those who actually like Calamari (not me!)....anyway, here's one from Hungry Girl: "Calamari Me! Think it's IMPOSSIBLE to enjoy guilt-free "fried" calamari? It's NOT!"

Time 25m

Yield 1 serving of calamari, 1 serving(s)

Number Of Ingredients 12

4 ounces squid rings, raw (not breaded)
1/4 cup Fiber One cereal (original)
3 tablespoons panko breadcrumbs (like the kind by Progresso)
2 tablespoons liquid egg substitute (like Egg Beaters Original)
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon italian seasoning
1/4 teaspoon salt
1 dash black pepper, to taste
reduced-fat parmesan cheese, grated
lemon wedge
low-fat marinara sauce

Steps:

  • Preheat oven to 350 degrees.
  • Using a blender or food processor, grind Fiber One cereal to a breadcrumb-like consisten cy. Pour crumbs into a plastic container that has an airtight lid (or into a sealable plastic bag). Add panko, garlic powder, onion powder, Italian seasoning, and salt. Add as much pepper as you like. Seal and shake to mix thoroughly.
  • Make sure calamari rings are as dry as possible. (Use a paper towel to soak up moisture.) Place them in a dish, and pour egg substitute over them. Toss to coat evenly.
  • Transfer rings to the crumb mixture, and secure lid or seal bag. Shake until rings are thoroughly coated, and then place rings on a baking sheet sprayed with nonstick spray. Open any rings that are sticking to themselves.
  • Bake calamari in the oven for 15 minutes, flipping them about halfway through, until firm and fully cooked. If you like, sprinkle with Parm-style topping and serve with lemon wedges and/or marinara sauce. YUM!

Tips:

  • Use fresh calamari. Fresh calamari is more tender and flavorful than frozen calamari. If you can't find fresh calamari, you can use frozen calamari, but be sure to thaw it completely before cooking.
  • Clean the calamari properly. To clean the calamari, remove the head, tentacles, and ink sac. Then, score the body of the calamari in a criss-cross pattern. This will help the calamari to cook evenly.
  • Don't overcook the calamari. Calamari is a delicate seafood that can easily be overcooked. Cook the calamari for just a few minutes until it is opaque and tender.
  • Serve the calamari with your favorite dipping sauce. Calamari is traditionally served with a dipping sauce such as marinara sauce, tartar sauce, or lemon-butter sauce.

Conclusion:

HG's Faux Fried Fabulous Calamari is a delicious and healthy way to enjoy calamari. This recipe is easy to make and can be served as an appetizer or main course. The calamari is coated in a light breading and then baked in the oven until it is crispy and tender. Serve the calamari with your favorite dipping sauce and enjoy!
