1 medium head cabbage, finely shredded
3 to 4 green onions, sliced
3/4 cup sugar
3/4 cup vinegar
1-1/2 teaspoons celery seed
1-1/2 teaspoons salt
3/4 cup canola oil

  • In a large bowl, combine cabbage and onions. In a saucepan, combine the sugar, vinegar, celery seed and salt; bring to a boil. Add oil; return to boiling and cook until sugar dissolves. Pour over cabbage; toss gently. Chill.

1 head cabbage, thinly sliced
2 onions, thinly sliced
1/2 cup plus 2 tablespoons sugar
1 cup cider vinegar
1 teaspoon dry mustard
2 teaspoons salt
1 teaspoon celery seed
1 clove garlic, minced
1/2 - 3/4 cup vegetable oil
2 bottles sliced pimentos

Steps:

  • Shred cabbage & onions. Cover with the 1/2 cup sugar. Lightly toss then set aside for about one hour. Boil vinegar, 2 tablespoons sugar, mustard, salt, and celery seed; pour over cabbage while hot. Add grated diced pimientos. Add garlic & salad oil. Let set 24 hours; serve cold. It is quite tart, so add sugar "to taste". Will keep in refrigerator for weeks. The longer in refrigerator, the better. Cook's notes: Use sweet yellow onions for best taste. Vadalia onions are excellent when available.

1 medium head green cabbage (about 2 pounds)
1/2 medium head purple cabbage (about 1 pound)
2 carrots, grated on the large holes of a box grater

Steps:
