I've been making this casserole for almost 20 years and it's always a hit. Even my meat-eater husband likes it. Serve with a crusty French bread or soft breadsticks. Leftovers are great in an omelet the next day.

Tips:

  • Use fresh zucchini: Fresh zucchini has a higher water content, which helps to keep the bread moist. If using store-bought zucchini, be sure to drain it well before adding it to the batter.
  • Shred the zucchini finely: This will help to distribute the moisture evenly throughout the bread. You can use a box grater or a food processor fitted with a shredding blade.
  • Don't overmix the batter: Overmixing can result in a tough bread. Mix just until the ingredients are combined.
  • Bake the bread at a high temperature: This will help to create a crispy crust and a tender interior.
  • Let the bread cool completely before slicing: This will help to prevent the bread from crumbling.

Conclusion:

This herbed zucchini cheese bread is a delicious and easy-to-make bread that is perfect for any occasion. It's moist, flavorful, and packed with zucchini and cheese. Whether you're serving it for breakfast, lunch, or dinner, this bread is sure to be a hit. So next time you're looking for a new bread recipe, give this one a try. You won't be disappointed!
