3/4 cup nonfat dry milk powder
3 tablespoons all-purpose flour
2 cups 2% milk

  • In a large saucepan, combine the first six ingredients; bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. , Stir in tomato paste until blended. 5 14-ounce cans diced tomatoes in juice
1/2 cup chopped shallots
2 tablespoons minced lemongrass
1 tablespoon minced fresh ginger

2 tablespoons honey
2 cups chicken stock or canned low-salt broth
1 cup dry white wine
1/2 cup fresh lime juice
1/4 cup chopped fresh cilantro
2 tablespoons chopped fresh mint
2 teaspoons grated lime peel
2 tablespoons fresh lemon juice
2 tablespoons aquavit or vodka
1/2 cup thinly sliced fresh arugula

Steps:

  • Heat oil in heavy large pot over medium-low heat. Add tomatoes with their juice, shallots, lemongrass, ginger and garlic; simmer until liquid evaporates, about 12 minutes. Add honey and simmer until mixture is very thick, stirring frequently, about 8 minutes. Add chicken stock and next 5 ingredients. Simmer 30 minutes.
  • Working in batches, strain soup into large bowl, pressing on solids to release juices. Discard solids. Season soup with salt and pepper. Chill soup at least 8 hours.

3/4 cup dried garbanzo beans, soaked overnight,cooked until tender (or use 1 can, drained and rinsed)
1/2 teaspoon salt
1/4 cup butter, melted or 1/4 cup olive oil
2 cloves garlic, minced
1 cup finely chopped onion (about 2 medium)
1/2 cup finely chopped carrot (about 1 medium)
1/4 teaspoon pepper
3/4-1 teaspoon crumbled dried basil
1 small whole bay leaf
1 (28 ounce) can plum tomatoes
3 cups chicken broth or 3 cups water
crumbled dried basil

  • Heat butter or olive oil over medium heat and saute garlic, onions and carrot until translucent; add pepper, herbs and tomatoes and bring to boil (note: I puree my tomatoes in the blender, but you can use them whole and break them up as they cook for more texture); reduce heat and simmer, uncovered, for 20 minutes, breaking up tomatoes as they cook; mix in chickpeas and broth; taste and adjust seasoning; simmer, uncovered, for 20 minutes to blend flavours; add more broth or water to thin, if necessary; serve with a sprinkle of dried, crumbled basil.

2 tablespoons extra virgin olive oil
2 medium onions, thinly sliced
2 -3 lbs fresh tomatoes, peeled and quartered
1 (6 ounce) can tomato paste
2 teaspoons dried basil
1 teaspoon dried thyme
1 teaspoon salt
1/4 teaspoon pepper
3 cups chicken broth

Steps:

  • Combine butter and olive oil in a large saucepan.
  • Add onion and cook until onions are tender but not brown.
  • Stir in tomatoes, tomato paste, basil, thyme, salt, and pepper.

2 bottle organic strained tomatoes, 24 oz bottles
2 stalk(s) organic celery, diced
2 medium organic carrots, diced
1 c diced onion
1 tsp oregano
1 Tbsp basil
1/2 tsp powdered bay
4 c chicken bone broth
6 Tbsp kerry gold butter
1 tsp himalayan salt or good sea salt
1/4 tsp black pepper
2 Tbsp dried coconut milk powder
1 c grated parmesan cheese

Steps:

  • 1. Place first 8 ingredients in crock pot and cook on LOW for 7 hours. Veggies will be nice and tender
  • 2. Add the butter, salt and pepper. Stir and then using an immersion blender puree the soup till smooth
  • 3. Add the parmesan cheese and stir well.
  • 4. Add the coconut milk powder and mix once more with the blender
