Time 25m

Yield 4 serving(s)

Number Of Ingredients 15

12 ounces peeled deveined shrimp, fresh or frozen
6 ounces packaged dried fettuccine or 6 ounces spinach fettuccine
2 cups sliced fresh mushrooms
1 large onion, chopped (1 cup)
2 cloves garlic, minced
1 tablespoon olive oil or 1 tablespoon cooking oil
1/4 cup dry white wine
1 tablespoon instant chicken bouillon granules
1 tablespoon snipped fresh basil or 1 teaspoon dried basil, crushed
1 1/2 teaspoons snipped fresh oregano or 1/2 teaspoon dried oregano, crushed
1 teaspoon cornstarch
1/8 teaspoon pepper
2 medium tomatoes, peeled,seeded,and chopped
1/4 cup grated parmesan cheese
1/4 cup snipped parsley

Steps:

  • Thaw shrimp, if frozen.
  • Cut shrimp in half lengthwise, set aside.
  • Cook pasta according to package directions.
  • Drain; keep warm.
  • Meanwhile, in a large saucepan cook mushrooms, onion, and garlic in hot oil until onion is tender but not brown.
  • In a small mixing bowl stir together wine, bouillon granules, basil, oregano, cornstarch, and pepper.
  • Add to saucepan.
  • Cook and stir until thickened and bubbly.
  • Add shrimp to wine mixture.
  • Cover and simmer about 2 minutes or until shrimp turn opaque.
  • Stir in tomatoes; heat through.
  • Spoon the shrimp mixture over pasta.
  • Sprinkle with Parmesan cheese and parsley.
  • Toss to mix.
  • Makes 4 main-dish servings.

Tips:

  • Select succulent shrimp: Opt for fresh or frozen shrimp with a firm texture and vibrant color. Avoid shrimp that appear slimy or discolored.
  • Properly devein the shrimp: Deveining removes the digestive tract, resulting in a cleaner and more flavorful shrimp. Use a sharp knife to make a shallow incision along the back of the shrimp and remove the dark vein.
  • Marinate the shrimp: Marinating the shrimp in a mixture of olive oil, lemon juice, garlic, and herbs enhances their flavor. Let the shrimp marinate for at least 30 minutes, or up to overnight.
  • Cook the shrimp perfectly: Overcooked shrimp become tough and rubbery. Cook them quickly over medium-high heat until they turn opaque and pink, about 2-3 minutes per side.
  • Use quality fettuccine noodles: Choose high-quality fettuccine noodles made with durum wheat flour for a firm and chewy texture. Cook the noodles according to the package instructions.
  • Make a flavorful sauce: The sauce is the heart of this dish. Use a combination of butter, garlic, white wine, and heavy cream to create a rich and creamy sauce that complements the shrimp and fettuccine.
  • Add fresh herbs: Fresh herbs like parsley, basil, and thyme add a burst of flavor and color to the dish. Chop them finely and stir them into the sauce just before serving.

Conclusion:

This Herbed Shrimp Fettuccine recipe presents a delectable combination of succulent shrimp, tender fettuccine noodles, and a creamy, flavorful sauce infused with aromatic herbs.
