1/2 cup dried parsley flakes
1 teaspoon dried thyme
1 teaspoon dried rosemary, crushed
1/2 teaspoon dried oregano
2 tablespoons Dijon mustard
2 blocks (8 ounces each) dill Havarti cheese
1 sheet frozen puff pastry, thawed
1 egg, beaten
Coarse salt, optional
Assorted crackers and fresh fruit

Steps:

  • In a shallow bowl, combine the parsley, thyme, rosemary and oregano. Spread mustard over cheese blocks; roll in herbs to coat. , On a lightly floured surface, roll pastry to about 13 in. long (or long enough to fit cheese blocks end to end). Place cheese on pastry and fold pastry around cheese; trim excess dough. Pinch edges to seal. Place seam side down on an ungreased baking sheet. , Brush pastry with egg. With floured cutters, cut decorative shapes from dough scraps if desired; arrange over the top and brush with egg. Sprinkle with salt if desired. Bake at 375° for 20-25 minutes or until puffed and golden brown. Serve warm with crackers and fruit.

5 tablespoons olive oil
2 cups finely chopped onions
2 teaspoons minced garlic
3 (28 ounce) cans Italian plum tomatoes, drained
2 teaspoons dried basil
1 teaspoon dry crushed red pepper
2 cups chicken broth
1 lb penne
2 1/2 cups packed grated havarti cheese
1/2 cup grated parmesan cheese
1/2 cup finely chopped basil

Steps:

  • Heat 3 tablespoons oil in skilled over medium high and add onion and garlic.
  • Saute until onion is slightly browned.
  • Mix in tomatoes, dried basil and crushed pepper.
  • Bring to a boil.
  • Break up tomatoes.
  • Add broth and bring to a boil again.
  • Reduce to simmer and cook until reduced to 6 cups, about one hour.
  • Add salt and pepper to taste.
  • Preheat oven to 375.
  • Cook pasta, per package directions and drain well.
  • Toss pasta with 2 tablespoons olive oil.
  • Pour sauce over and mix well.
  • Stir in havarti and transfer to a 13 x 9 baking dish.
  • Sprinkle with parmesan and bake 30 minutes.
  • When done, sprinkle with fresh basil.

1 lb havarti cheese in a block, from the deli counter
1 pkg frozen puff pastry, pepperidge farm
1/2 c honey
1/4 c slivered almonds

Steps:

  • 1. Defrost puff pastry sheet. Wrap havarti cheese in puff pastry sheet, place seam down on baking sheet lined with parchment paper.
