Tips for the Perfect Herbed Country Breakfast Potatoes:

  • Choose the Right Potatoes: Use small, waxy potatoes like Yukon Gold or Red Bliss for the best texture and flavor.
  • Cut Them Uniformly: Cut the potatoes into 1-inch cubes or wedges for even cooking.
  • Don't Crowd the Pan: Cook the potatoes in batches to avoid overcrowding and ensure they get crispy.
  • Use a Well-Seasoned Skillet: A well-seasoned cast iron or stainless steel skillet will help the potatoes develop a nice crust.
  • Cook Them Low and Slow: Cook the potatoes over medium-low heat, stirring occasionally, to prevent burning and promote even cooking.
  • Add the Herbs and Spices: Stir in your favorite herbs and spices towards the end of cooking for maximum flavor.
  • Garnish and Serve: Garnish with fresh herbs or a sprinkle of cheese before serving for an extra touch of flavor.
