HERBED CHICKEN PASTA
I found this recipe many years ago in a Cooking Light magazine and it is my husband's favorite pasta dish. It's quick and easy, low cal and low fat too. We are garlic lovers and usually add 3 cloves of garlic to the dish. A green salad and french bread make a super meal. Hope you enjoy it as much as we do!

Tips for Making the Best Herbed Chicken Pasta:
- Use Fresh Herbs: Fresh herbs like basil, thyme, and parsley add a burst of flavor to the pasta. If you don't have fresh herbs on hand, you can use dried herbs, but reduce the amount you use by half.
- Cook the Chicken Properly: The chicken should be cooked through but not overcooked. Overcooked chicken will be dry and tough. To ensure that the chicken is cooked properly, use a meat thermometer to check that it has reached an internal temperature of 165°F (74°C).
- Don't Overcook the Pasta: Pasta should be cooked al dente, meaning it should have a slight bite to it. Overcooked pasta will be mushy and unpleasant to eat.
- Use a Good Quality Olive Oil: Olive oil is a key ingredient in this dish, so it's important to use a good quality oil. Extra virgin olive oil has the best flavor and will give the pasta a rich, nutty taste.
- Season the Pasta Generously: Don't be afraid to season the pasta with salt and pepper. Salt enhances the flavor of the other ingredients, and pepper adds a bit of spice.
