BAKED HERBED CHICKEN BREASTS

Baked Herbed Chicken Breasts image

I got this recipe from one of my mom's church cookbooks. I always seem to find the best tasting recipe in church cookbooks! This recipe uses boneless chicken with a blend of spices to give it a wonderful taste. I usually make this with potatoes (prepared as fancy or simple as you like) and a vegetable. I also like to combine spices ahead of time. I've tried this by eliminating 1 or 2 spices when I was out and it still turns out wonderful.

HERBED CHICKEN BREASTS WITH BUTTERED LEEKS

Herbed Chicken Breasts With Buttered Leeks image

Here's an adaptation of a lovely, simple recipe created by Chef Jerry Traunfeld; it arrived in one of NPR's Lynne Rossetto Kasper's "Weeknight Kitchen" emailings. If you prefer, substitute 1/2 cup chopped dill for the 2 Tbs tarragon or marjoram. For leeks as a side dish minus the chicken, just carry out steps 1 and 2, then season to taste and serve. For a different side dish, carry out steps 1 and 2 but substitute sliced carrots for half the leeks and add garlic to taste plus a little lemon juice.

Provided by echo echo

Categories     Chicken Breast

Time 30m

Yield 4 serving(s)

Number Of Ingredients 8

2 cups thinly sliced leeks, white and light green parts only
2 cups chicken broth (I use low-sodium) or 2 cups chicken bouillon (I use low-sodium)
4 tablespoons unsalted butter
4 boneless skinless chicken breasts
kosher salt
pepper
2 teaspoons lemon juice
2 tablespoons coarsely chopped fresh tarragon or 2 tablespoons fresh marjoram

Steps:

  • In a large skillet bring the chicken broth and 2 Tbs butter to a gentle boil over medium heat.
  • Cook leeks in the broth mixture over medium heat about 8 minutes, until tender with the broth boiled down enough that leeks are not completely submerged.
  • Salt and pepper the chicken breasts and place on top of the simmering leeks, spooning some of leeks over the chicken.
  • Reduce the heat to low and cook, covered, 10-15 minutes until done.
  • Remove chicken and keep warm on a warmed platter.
  • Increase the heat under the leeks to high and stir in the lemon juice, the remaining 2 Tbs butter, and the chopped herb. When the butter melts, taste the sauce and adjust seasonings if needed.
  • Pour the leek sauce over the chicken and serve.

CHICKEN BREASTS STUFFED WITH HERBED COUSCOUS

Chicken Breasts Stuffed with Herbed Couscous image

Thanks to fresh mint and lemon zest, this stuffing has plenty of vibrancy. For a quick flavor switch, try cilantro or basil instead of mint, and walnuts instead of pine nuts. Use a spoon to pack in the couscous; most of it will stay put as you saute the chicken, but any that falls out won't burn.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken     Chicken Breast Recipes

Time 40m

Number Of Ingredients 8

1/2 cup couscous
Coarse salt and ground pepper
1/2 cup fresh mint leaves, coarsely chopped
3 tablespoons pine nuts
2 scallions, thinly sliced crosswise
1 teaspoon finely grated lemon zest plus 1 tablespoon fresh lemon juice (from 1/2 lemon)
2 tablespoons olive oil
4 boneless, skinless chicken breast halves, (6 to 8 ounces each)

Steps:

  • In a small saucepan, bring 3/4 cup water to a boil. Add couscous; season with salt and pepper. Cover, and remove from heat; let steam 5 minutes. Add mint, pine nuts, scallions, lemon zest and juice, and 1 tablespoon oil; season with salt and pepper, and fluff with a fork.
  • Lay chicken flat on a work surface. With a paring knife, cut a 2-inch-long slit in the thick side of each breast. Insert knife, and pivot inside chicken without enlarging opening, carefully forming a deep pocket (make sure not to pierce the opposite side). Stuff each breast with an equal amount of couscous mixture, packing it tightly.
  • In a large skillet, heat remaining tablespoon oil over medium. Season chicken with salt and pepper. Place in skillet, and cook until browned on one side, 6 to 8 minutes. Carefully turn chicken over, and add 1/2 cup water to skillet (a little couscous may fall out). Cover, and cook until chicken is opaque throughout, 6 to 8 minutes more.

HERBED BALSAMIC CHICKEN BREASTS

Make and share this Herbed Balsamic Chicken Breasts recipe from Food.com.

Provided by Dancer

Categories     Chicken

Time 27m

Yield 4 serving(s)

Number Of Ingredients 8

4 boneless chicken breast halves, with skin on washed and patted dry
2 cloves garlic, peeled,crushed
1 teaspoon herbes de provence or 1 teaspoon mixed herbs (basil, thyme and oregano)
1/2 teaspoon black pepper
1 tablespoon dijon-style mustard
1 tablespoon olive oil
1/4 cup balsamic vinegar
salt & freshly ground black pepper

Steps:

  • Make 3 slashes in skin only of chicken breasts; set them aside.
  • In bowl large enough to hold chicken breasts, whisk together garlic, herbes de Provence, pepper, mustard, oil and vinegar.
  • Add chicken and turn to coat it evenly.
  • Cover and refrigerate 30 minutes to 2 hours, turning at least once.
  • Just before grilling, preheat or prepare grill to medium-high.
  • Lightly oil grill grate.
  • Sprinkle chicken with salt and pepper.
  • Grill chicken, skin side down, 7 minutes or until crisp.
  • Turn and continue grilling until chicken is thoroughly cooked, about 5 minutes more.
  • Remove chicken from grill and serve hot.

Tips:

  • Prep the Chicken Breasts: Ensure the chicken breasts are evenly sized for even cooking. If they are not, use a meat mallet to pound them to a uniform thickness.
  • Use Fresh Herbs: The fresher the herbs, the more flavor they will impart to the chicken. If you don't have fresh herbs on hand, you can use dried herbs, but use half the amount as they are more concentrated.
  • Marinate the Chicken: Marinating the chicken in the herb mixture for at least 30 minutes, or up to overnight, allows the flavors to penetrate the meat and results in a more flavorful chicken.
  • Don't Overcook the Chicken: Chicken breasts are prone to drying out, so it's important not to overcook them. The internal temperature should reach 165°F (74°C) as measured by a meat thermometer.
  • Let the Chicken Rest: Once the chicken is cooked, let it rest for a few minutes before slicing and serving. This allows the juices to redistribute throughout the meat, resulting in a more tender and juicy chicken.
