3 cups all-purpose flour
4 teaspoons baking powder
2 tablespoons granulated sugar
3/4 teaspoons cream of tartar
1/2 teaspoon salt
3/4 cup butter, cold and cut into cubes
1 large egg
1 cup buttermilk (or whole milk)
1 cup sharp cheddar cheese, shredded
1/4 cup chopped fresh herbs, any combination, I used thyme, sage, parsley, and rosemary

Steps:

  • Preheat the oven to 450 degrees F. and grease or spray a cast-iron skillet with cooking spray.
  • In a medium bowl, whisk together the all-purpose flour, baking powder, sugar, cream of tartar, and salt. Set aside.
  • In a separate small bowl, whisk together the egg, milk, cheddar cheese, and chopped fresh herbs. Set aside.
  • Using a fork or pastry cutter, cut the cubed cold butter into the flour mixture until it resembles a coarse meal and the butter is about the size of a pea.
  • Mix the egg mixture into the flour mixture using a wooden spoon until it comes together to form a loose dough ball.
  • Roll the dough into a ball, flour a clean work surface, and then using a rolling pin. Roll out the dough and cut the biscuits using a biscuit cutter or anything with a round shape.
  • Place the cut biscuits into the prepared pan and bake for 10 to 15 minutes, until the tops of the biscuits are golden brown.
  • Brush the tops of the biscuits with additional butter if you would like and serve immediately.

Time 1h5m

Yield 8 biscuits

Number Of Ingredients 9

2 cups all-purpose flour, plus more as needed
1 tablespoon baking powder
1 1/2 teaspoons kosher salt
12 tablespoons (1 1/2 sticks) cold unsalted butter, diced
1/2 cup cold buttermilk, shaken
1 cold extra-large egg
1 cup grated extra-sharp Cheddar
1 egg, beaten with 1 tablespoon water or milk
Maldon sea salt, optional

Steps:

  • Preheat the oven to 425 degrees F.
  • Place 2 cups of flour, the baking powder, and salt in the bowl of an electric mixer fitted with the paddle attachment. With the mixer on low, add the butter and mix until the butter is the size of peas.
  • Combine the buttermilk and egg in a small measuring cup and beat lightly with a fork. With the mixer still on low, quickly add the buttermilk mixture to the flour mixture and mix only until moistened. In a small bowl, mix the Cheddar with small handful of flour and, with the mixer still on low, add the cheese to the dough. Mix only until roughly combined.
  • Dump out onto a well-floured board and knead lightly about 6 times. Roll the dough out to a rectangle 10 by 5 inches. With a sharp, floured knife, cut the dough lengthwise in half and then across in quarters, making 8 rough rectangles. Transfer to a sheet pan lined with parchment paper. Brush the tops with the egg wash, sprinkle with salt, if using, and bake for 20 to 25 minutes, until the tops are browned and the biscuits are cooked through. Serve hot or warm.

Categories     Food & Cooking     Breakfast & Brunch Recipes     Bread Recipes

Time 30m

Yield Makes 10

Number Of Ingredients 8

2 to 2 1/4 cups all-purpose flour, plus more for work surface
2 1/4 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground pepper
6 tablespoons cold unsalted butter, cut into small pieces
3/4 cup buttermilk
3/4 cup shredded cheddar cheese

Steps:

  • Preheat oven to 425 degrees, with rack on lower shelf. In a large bowl, whisk together 2 cups flour, baking powder, baking soda, salt, and pepper. Cut in butter with a pastry blender until mixture resembles coarse crumbs, with some pea-size lumps. Mix in buttermilk and cheese until combined. With a floured hand, knead dough against side of bowl until it holds together. If it is sticky, knead in up to 1/4 cup more flour.
  • After kneading biscuit dough, turn it out onto a lightly floured work surface. Pat the dough to 1 inch thick. With a floured 2-inch biscuit cutter, cut out rounds as close together as possible. Place on a baking sheet. Gather scraps; pat again, and cut out more rounds.
  • Brush the tops with 1/2 tablespoon melted unsalted butter. Bake until biscuits are golden brown, rotating sheet halfway through, 18 to 20 minutes. Serve warm.

Tips:

  • Use cold butter. This will help the biscuits to be flakier.
  • Use grated sharp cheddar cheese. This will give the biscuits a more intense flavor.
  • Do not overwork the dough. Overworking the dough will make the biscuits tough.
  • Chill the dough for at least 30 minutes before baking. This will help the biscuits to hold their shape.
  • Bake the biscuits in a hot oven. This will help them to rise quickly and evenly.
  • Serve the biscuits warm. This is when they are at their best.

Conclusion:

These herbed cheddar biscuits are a delicious and easy-to-make side dish that is perfect for any occasion. They are also a great way to use up leftover cheese. Whether you are serving them for breakfast, lunch, or dinner, these biscuits are sure to be a hit.
