1/2 cup (4 ounces) goat cheese, at room temperature
2 tablespoons chopped fresh basil leaves
Kosher salt and freshly ground black pepper
Vegetable oil cooking spray
2 tablespoons unsalted butter, at room temperature
1 large leek (white and light green part only), thinly sliced
4 cups low-sodium chicken broth
2 pounds medium asparagus, trimmed and cut into 1-inch pieces
1/2 cup chopped fresh basil leaves
Kosher salt and freshly ground black pepper
Special equipment: a 1/2-ounce cookie or ice cream scoop

Steps:

  • Goat cheese: Line a small baking sheet with parchment paper. Set aside.
  • Using a fork, in a small bowl, combine the goat cheese and basil until smooth. Season with salt and pepper, to taste. 1 tablespoon butter
2 cans (14-1/2 ounces each) reduced-sodium chicken broth or vegetable broth
1 pound fresh asparagus, trimmed and cut into 1-inch pieces
1/2 teaspoon salt
1/2 to 3/4 teaspoon dried thyme
1/8 teaspoon pepper
1 bay leaf
2 tablespoons all-purpose flour
3 tablespoons water
1/4 cup reduced-fat sour cream
1 teaspoon grated lemon zest

Steps:

  • In a large saucepan, saute onions and garlic in butter. Add the broth, asparagus, salt, thyme, pepper and bay leaf. Bring to a boil.
