Holidays are coming and here is yet another sweet potato recipe. The thyme, garlic and red pepper gives great flavor to the sweet potatoes. Instead of olive oil try using Pam or No Oil. Just spray the slices on both sides then shake them in the zip lock bag with the herbs. Use Yams if you prefer.

Time 1h

Yield 4 servings

Number Of Ingredients 11

2 turkey tenderloins (about 1 pound each)
Salt and freshly ground black pepper
2 teaspoons ground cumin
Olive oil
2 large sweet potatoes, peeled and cubed (2-inch pieces)
2 ripe mangoes, peeled and flesh sliced from seed
1/2 cup fresh mint leaves
1/4 cup fresh lime juice
1 teaspoon Dijon mustard
1 teaspoon minced fresh ginger
1/4 cup plain yogurt

Steps:

  • Preheat oven to 400 degrees F.
  • Season turkey tenderloins all over with salt, black pepper and cumin.
  • In a large skillet over medium high heat, add about 2 to 3 tablespoons olive oil. Once heated, add the turkey tenderloins and saute on 1 side. Add the potatoes to the pan, flip the turkey, when ready and place the pan into the preheated oven. Roast turkey and potatoes for about 15 minutes or until a meat thermometer registers 170 to 180 degrees F. Let turkey stand 10 minutes before slicing crosswise into 1/2-inch thick slices.
  • Meanwhile, in a blender combine mangoes, mint, lime juice, mustard, and ginger. Puree until blended. Add yogurt and puree until smooth. Serve 1/2 of the turkey with all of the sauce spooned over top and all of the sweet potatoes.
  • Reserve remaining turkey for Thai Turkey and Rice.

Tips:

  • Choose the right sweet potatoes: Look for firm, unblemished sweet potatoes that are about the same size so they cook evenly.
  • Scrub the sweet potatoes thoroughly: Use a vegetable brush to remove any dirt or debris from the potatoes.
  • Cut the sweet potatoes into uniform pieces: This will help them cook evenly. If you are making roasted sweet potato wedges, cut the potatoes into 1-inch thick wedges. If you are making roasted sweet potato cubes, cut the potatoes into 1-inch cubes.
  • Toss the sweet potatoes with olive oil, herbs, and spices: This will help them to brown and caramelize in the oven. Some good herb and spice combinations to try include rosemary and garlic, thyme and paprika, or cumin and chili powder.
  • Roast the sweet potatoes at a high temperature: This will help them to caramelize and develop a crispy exterior. Roast the potatoes at 425 degrees Fahrenheit for 20-25 minutes, or until they are tender and browned.
  • Serve the sweet potatoes hot: Roasted sweet potatoes are best served immediately after they are cooked. They can be served as a side dish, or they can be used in a variety of other dishes, such as salads, soups, and stews.

Conclusion:

Roasted sweet potatoes are a delicious and versatile side dish that can be enjoyed by people of all ages. They are packed with nutrients, and they are a good source of fiber, vitamins, and minerals. Roasted sweet potatoes can be made with a variety of herbs and spices, so you can easily customize them to your own taste.
