Seared Sea Scallops with Sauteed Wild Mushrooms, Fresh Herb Salad, and Roasted Garlic Beurre Blanc image

4 shallots, finely diced
2 lemons, juiced
4 cups white wine, preferably Muscadet
4 fresh thyme sprigs
6 peppercorns
2 bay leaves
8 ounces roasted garlic
4 ounces heavy cream
32 ounces butter, cubed and cold
Kosher salt and freshly ground black pepper
Honey, optional
1/2 cup canola oil
24 ounces mixed mushrooms
4 tablespoons minced garlic
4 tablespoons minced shallots
4 tablespoons chopped mixed fresh herbs (parsley, tarragon, chives, basil)
Kosher salt and freshly ground black pepper
12 jumbo sea scallops
1 cup canola oil, divided
2 teaspoons kosher salt
2 teaspoons freshly ground black pepper

Steps:

  • Beurre Blanc: Combine the shallots, lemon juice, wine, thyme, peppercorns, bay leaves, and roasted garlic in a small sauce pot. Bring to a boil and reduce until almost dry, leaving about 1/8 cup. Reduce heat to low and add the cream. Begin adding the butter, 1 cube at a time, whisking continuously. As each cube incorporates into the sauce, add another until all butter has been added. Strain through a fine mesh strainer. Taste and adjust the seasoning with salt and pepper. If you feel that the sauce is too acidic, add a bit of honey to balance the flavor. Be sure to use only a small amount of honey so as not to make the sauce taste too sweet. Cover and keep warm until ready to serve.
  • Mushrooms: Place a saute pan over high heat and add enough canola oil to just cover the bottom of the pan. Allow the pan to preheat until you just begin to see light wisps of smoke coming from the pan. Add the mushrooms and begin to saute until the mushrooms are cooked halfway. Add the garlic and shallots to the pan and continue to saute, keeping the mushrooms moving at all times. When the mushrooms are just cooked through add the fresh herbs to the pan and season with salt and pepper, to taste. Taste the mushrooms and adjust the seasoning, if necessary. Cover and keep warm while you saute the scallops.
  • Scallops: In a bowl, toss the sea scallops lightly in 1/2 cup canola oil. Season each scallop evenly on both sides with salt and pepper. Put a saute pan that is large enough to hold the scallops in 1 layer without them touching over high heat. Add enough canola oil to just cover the bottom of the pan. Allow the pan to preheat until you begin to see light wisps of smoke coming from the oil. Add the scallops to the pan carefully and allow them to get a deep golden brown color. Turn the scallops and allow the second side to get the same golden brown color. If you want the scallops to be more cooked, place the scallops in a preheated 350 degree F oven until they reach the desired doneness. Serve with mushrooms and drizzle with buerre blanc sauce.

1/4 cup plus 2 tablespoons extra-virgin olive oil, plus more for drizzling
3 tablespoons balsamic vinegar
1 tablespoon whole-grain mustard, such as Maille
Kosher salt and freshly cracked black pepper
4 large portobello mushroom caps, stems and gills removed
1 large shallot, minced
2 large cloves garlic, minced
Pinch red pepper flakes
2 cups diced yellow squash (2 to 3 squash)
2 cups diced zucchini (1 to 2 zucchini)
2 plum tomatoes, diced
1/2 cup panko
1/2 cup freshly grated Parmesan
2 tablespoons minced parsley leaves

Steps:

  • Position an oven rack 4 inches from the broiler and preheat the broiler to high.
  • Whisk together 1/4 cup of the oil, the vinegar and mustard in a 9- by 13-inch baking dish. Season with salt and pepper. Dip each mushroom cap in the marinade, turning to coat on all sides. Let the mushrooms sit in the marinade for 15 to 20 minutes.
  • Heat the remaining 2 tablespoons oil in a large nonstick skillet over medium-high heat. Add the shallots and saute until just beginning to soften, about 2 minutes. Add the garlic and red pepper flakes and cook for 1 minute. Add the squash, zucchini and tomatoes, sprinkle with salt and pepper and saute until beginning to soften, 4 minutes.
  • Mix together the panko, Parmesan and parsley in a small bowl. Season with salt and pepper and set aside.
  • Heat a grill pan over medium-high heat. Grill the mushrooms, cap-side down, until slightly charred, about 3 minutes per side. Wipe out the baking dish with a paper towel and return the mushrooms to the baking dish, cap-side down. Divide the sauteed vegetables among the mushroom caps. Cover the vegetables with the panko mixture, drizzle with a bit of olive oil and place under the broiler until browned, about 2 minutes. Serve hot or at room temperature.

2 tablespoons freshly ground black pepper
4 tablespoons chopped fresh rosemary
1/2 cup olive oil
1 (2 1/2 to 3-pound) beef eye round
3 pounds Yukon gold potatoes, peeled and quartered
1/4 cup butter
2 tablespoons olive oil
3 tablespoons potato water, reserved
Salt
2 tablespoons fresh thyme leaves
2 tablespoons fresh marjoram leaves
1 tablespoon chopped fresh rosemary
1 teaspoon freshly ground black pepper
1/4 cup olive oil
1 (8 to 10-ounce) wheel Camembert cheese, cut in half through the center (horizontally)
2 tablespoons herb oil from Baked Camembert and Herb Oil recipe
1 teaspoon butter
1 pound crimini mushrooms, quartered
Salt and freshly ground black pepper

Steps:

  • For the balsamic marinated roast beef: Put the balsamic vinegar, chopped garlic and black pepper in a small saute pan over medium to high heat and reduce for 1 to 2 minutes. Remove the pan from the heat, stir in the chopped rosemary and olive oil, and allow the mixture to cool.
  • Put the marinade in a baking pan, put the beef in the pan and coat with hands. Put in the refrigerator to marinate for a minimum of 30 minutes, maximum 24 hours.
  • Preheat the oven to 350 degrees F and remove the marinated beef from the refrigerator. Put the beef in the oven and roast for approximately 45 minutes to 1 hour, until cooked to medium-rare and an instant thermometer inserted in the center of the roast has an internal temperature between 130 and 140 degrees F.
  • Remove the beef from the oven and allow the beef to rest before slicing.
  • For the mashed potatoes: Cook the potatoes in enough heavily salted water to cover, until tender. Drain the potatoes, reserving 3 tablespoons of the water. Put the potatoes back into the hot pot and using a potato ricer, rice the potatoes or mash.
  • Put the butter, olive oil, and reserved potato water in the pot with the potatoes. Season the potatoes with salt. Gently fold the ingredients together until incorporated. Taste and adjust seasoning, if necessary.
  • For the baked camembert and herb oil: Preheat the oven to 350 degrees F and line a baking dish or oven-proof saute pan with parchment paper.
  • Put the thyme, marjoram, rosemary, black pepper, and olive oil in a bowl and mix to incorporate.
  • Put the bottom half of the Camembert on parchment paper. Spoon 1 tablespoon herb oil in the center of Camembert, place the top half on top and pour 1 tablespoon herb oil over top. Place the Camembert in the oven until the cheese has melted, approximately 10 minutes.
  • For the sauteed mushrooms: Put the remaining herb oil and butter in a saute pan over medium-high heat. Put the mushrooms in the hot pan and saute until slightly caramelized. Season with salt and pepper, and then remove from the heat.
  • To assemble: To serve, place the roast beef and mashed potatoes on a warm plate and spoon the sauteed mushrooms and baked Camembert over the meat and potatoes.

Steps:

  • Preheat oven to 350ºF.
  • MUSHROOMS.
  • CLEAN top of mushrooms with damp cloth. Place cleaned mushrooms on a sheet tray, stem side down. Bake at 350ºF for 5-8 minutes.
  • REMOVE from oven until ready to stuff, in step 5 below.
  • STUFFING.
  • BROWN sausage in a nonstick skillet, crumbling sausage into small pieces. Once browned, drain fat and transfer to a paper towel to cool.

6 tablespoons reduced-fat stick margarine
1 small onion, chopped
1/4 teaspoon garlic powder, or 2 cloves garlic, minced
1 (3-ounce) package low-fat cream cheese, softened
3 tablespoons grated Parmesan
2 tablespoons chopped fresh parsley leaves, or 2 teaspoons dried parsley flakes
1 cup packaged herb-seasoned stuffing croutons

Steps:

  • Preheat oven to 425 degrees F.
  • Remove stems from mushrooms. Chop enough stems to make 1 cup. Melt 2 tablespoons margarine in saucepan. Brush mushroom cap tops with margarine, place top side down in shallow baking pan and brush undersides of caps. Heat remaining margarine in same saucepan. 2/3 cup pasta flour
2 eggs
3/4 cup blue cheese (soft)

2 chicken breasts (bone in)
1 small bunch thyme
2 sprigs rosemary
1 bay leaf
1 head garlic, halved horizontally
2 lemons, sliced
1 teaspoon white peppercorns
1 teaspoon coriander seed
sea salt and black pepper
2 tablespoons olive oil
2 tablespoons butter

Steps:

  • 3 lbs large Idaho potatoes, a scant 2/3 cup (not quite 2/3 cup) of pasta flour, 2 eggs,3/4 to 1 cup of soft blue cheese,3 tbsp chopped mixed herbs (chervil, parsley, chives, basil),Salt and pepper,olive oil, to drizzle and fry.
  • 1 tbsp butter Bake the potatoes in the oven until the skin is crisp on the outside and the potato is soft and fluffy in the middle. Scoop out the flesh then pass through a mouli until completely smooth and there are no lumps (a food mill would also work for this).
  • Lay the potatoes out on the work surface and dust with flour. Mix together.
  • Make a well in the middle of the potato and flour mix. Beat the eggs and cheese together and pour into the well. Gradually fold together the potato and flour mix into the wet ingredients then add the herbs and seasoning to taste.
  • Scoop the mixture into a bowl and cool until firm. Shape the mixture into long sausages, about 1.5cm thick on a lightly floured surface. Cut into 2-3 cm lengths with the back of a knife so the ends are blunted a little.
  • Bring a large pan of salted water to the boil. Add the gnocchi. As soon as they float to the surface, give them another 30 seconds then fish out with a slotted spoon into a bowl of ice-cold water. Repeat with the rest. Drain then dry completely with kitchen paper or in a clean tea towel. Toss in a little olive oil.
  • Heat some oil and the butter in a frying pan and brown the blanched gnocchi for a few minutes, turning them, until nicely caramelized all over.
  • To cook chicken, 2 chickens (both chicken breasts, bone in),Small bunch of thyme,2 sprigs of rosemary, 1 bay leaf,1 head of garlic, halved horizontally,2 lemons, sliced,1 tsp white peppercorns,1 tsp coriander seeds,sea salt and black pepper,2 tbsp olive oil,2 tbsp butter.
  • Season the chicken with salt and pepper. In a baking dish, combine all other ingredients and then add the chicken on top. Place in a 375ºF oven and roast for 20-25 minutes. Remove from oven and let rest for 10 minutes.
  • Garnish per plate, 2 baby carrots,1 salsify baton,1 baby leek, A few white mushrooms (or other seasonal variety), chopped, Olive oil, A few truffle slices, if available
  • Blanch the carrots, parsnip and carrots in boiling water for 1-2 minutes then dip in ice and water bath to stop the cooking process. Then sauté them with the mushrooms in olive oil and check for seasoning.
  • To serve, carve the breast meat from the bone and arrange the chicken with the herb gnocchi, pan-roasted baby carrots, leek, parsnip and mushrooms then scatter with a few slices of truffle, if available.

Steps:

  • In a large skillet, saute shallots and mushroom caps in butter for 2 minutes. Season with salt and pepper.

Potato Lasagna With Wild Mushrooms And Herb Sauce image

4 large Idaho potatoes of equal size
8 ounces unsalted butter
3 ounces shiitake mushrooms (see note)
3 ounces oyster mushrooms (see note)
3 ounces white mushrooms
3 ounces chanterelles (optional)
1 large shallot
1/2 bunch parsley
Half a bunch, or 8 ounces, celery, diced
2 ounces leek, diced
1 ounce shallots, diced
1 ounce onions, diced
1 ounce butter
1 cup dry white wine
1 clove garlic
1 branch fresh thyme
Juice of 1/2 lemon
8 ounces butter
1 ounce diced tomatoes

Steps:

  • Preheat the oven to 300 degrees.
  • Peel and cut the potatoes into rectangular shapes, about 3 by 1 1/2 inches.
  • Using a mandoline, a vegetable slicer or a sharp kitchen knife, slice each potato rectangle into 5 slices.
  • Line a cookie sheet with parchment paper and brush the parchment with the melted butter. Spread out the potato slices on a cookie sheet. Butter another piece of parchment paper and place, buttered side down, on the potatoes. Cook in the oven until the potatoes are soft, about 10 to 15 minutes.
  • Chop all the mushrooms. Heat 1 tablespoon of the butter in a saute pan and add the mushrooms. Cook over medium-low heat until they are soft. Add the finely chopped shallots and cook for 2 minutes more, or until the shallots are translucent.
  • In a medium-sized saucepan, melt 2 tablespoons of butter. Add the diced celery, leeks, shallots and onion. Saute for about 5 minutes. Add the wine and, over high heat, reduce the liquid until it almost totally evaporates. Add 1 cup of water, the garlic, thyme and lemon juice and reduce it by a fourth. There should be 6 ounces of liquid. Strain through a sieve, pressing on the vegetables to release the juices. While the liquid is hot, pour it into a blender. Whir the liquid, adding 8 ounces of butter tablespoon by tablespoon. Season the sauce with salt and pepper to taste. Pour the broth back into the pan and stir in the chopped parsley and diced tomatoes.
  • To serve, alternate slices of potato with mushrooms. Spoon the celery sauce over the potatoes and serve.

3 tablespoons fresh bread crumbs
2 tablespoons freshly grated Parmesan cheese
3 tablespoons Gruyere or Swiss cheese grated as finely as possible
1 tablespoon finely chopped parsley
2 teaspoons finely chopped fresh basil
1/2 teaspoon finely chopped fresh thyme or half the amount dried
1/4 pound fresh cultivated mushrooms (see note)
1/4 pound assorted wild mushrooms such as shiitake, morels and pleurotes, available in specialty shops where fine fresh vegetables are sold
2 tablespoons unsalted butter
2 tablespoons finely minced shallots
1/2 teaspoon finely minced garlic
1 1/2 tablespoons dry Madeira wine
2 1/2 tablespoons medium-dry Sherry
3/4 cup heavy cream
Salt to taste if desired
Freshly ground pepper to taste
Sprigs of fresh parsley or coriander leaves for garnish, if desired

Steps:

  • To make the herb crust, combine the bread crumbs, Parmesan cheese, Gruy ere cheese, parsley, basil and thyme. Blend and set aside.
  • Cut away and discard the stems of all the mushrooms. Cut all the mushroom caps into fairly large bite-size pieces. They will shrink as they cook.
  • Heat the butter in a skillet and add the shallots and garlic. Cook, stirring, until wilted.
  • Add the mushrooms and cook, stirring, until the mushrooms give up their liquid. Cook until the liquid evaporates. The cooking time should be five to eight minutes. Scrape the mushrooms into a bowl and set aside.
  • To the skillet add the Madeira, Sherry, cream, salt and pepper. Cook over moderate heat about 10 minutes or until the sauce is reduced to about one-half cup.
  • Meanwhile, preheat the broiler to high.
  • Add the mushrooms to the cream sauce and blend. Spoon and scrape the mixture into a heat-proof serving dish. Cover with the herb and crumb mixture.
  • Run the dish under the broiler and broil until the crust is nicely browned. Garnish, if desired, with sprigs of fresh parsley or fresh coriander leaves.

1 1/2 tablespoon extra-virgin olive oil, divided
1 1/2 cup farro
3 1/2 cups low-sodium chicken broth
3 links mild or sweet Italian pork sausage, removed from casings
1 cup chopped red onion
2 cloves garlic, finely chopped
2 cups cremini or button mushrooms, halved or quartered
2 cups packed baby spinach
Salt and pepper to taste
1/4 cup chopped parsley
2 tablespoons chopped oregano

Steps:

  • Heat 1 tablespoon of the oil in a medium pot over medium-high heat. Add farro and cook, stirring often, until fragrant and toasted, 4 to 5 minutes. Add broth and bring to a boil. Reduce heat to medium, cover and cook, stirring occasionally, until liquid is absorbed and farro is tender, 20 to 25 minutes. Meanwhile, heat remaining 1/2 tablespoon oil in a large skillet over medium-high heat. Add sausage and cook, breaking it up into small chunks with a spatula, until almost cooked through, 6 to 8 minutes. Add onions and garlic and cook until onions are translucent, about 5 minutes. Add mushrooms, toss well and cook, stirring occasionally, until just softened, 4 to 5 minutes. Remove skillet from the heat and stir in spinach until wilted. Season with salt and pepper. Stir parsley, oregano, salt and pepper into pot with farro, then spoon onto plates. Top with sausage-mushroom mixture and serve.

Adapted from the version on blog.lunchboxbunch.com. I found the dough was fantastically easy to prepare, rolled out really nicely (and I'm not the best at making my own pastry). Not everyone likes the flavour of chana/garbanzo bean flour, I think any sub there would work well. The original recipe calls for pine nuts, but since they are so expensive these days, I have used blanched almonds. It's obviously a bit of an undertaking when you're making all the sections from scratch, but well worth the effort. Serve warm or at room temperature, I successfully made this the night before and then let it come to room temperature for lunch the next day.

1 teaspoon sea salt
1 tablespoon agave nectar (I think any sub here would be fine)
1/3 cup flax seed meal
3/4 cup flour (I used barley but most any sort should work)
1/4 cup chana flour (garbanzo bean flour, or any sub you like)
1 tablespoon olive oil
black pepper
1 tablespoon chopped parsley (or other fresh herb)
cornmeal (for dusting)
2 tablespoons olive oil
4 shallots, chopped fine
1 cup mushroom, diced
1 cup red bell pepper, diced
2 teaspoons cumin
2 teaspoons red pepper flakes (optional)
1/4 cup fresh parsley, chopped
2 tablespoons lemon juice
1 (13 ounce) package firm silken tofu (usually 12-14 oz)
1/4 cup arrowroot, powder
1 teaspoon sea salt
black pepper
1/2 cup plain soymilk
1 tablespoon nutritional yeast (or vegan parm)
1/4 cup pine nuts (or sub blanched almonds)
1 tablespoon agave nectar
1/4 cup vegan mozzarella cheese (or Jack) or 1/4 cup vegan mozzarella cheese, grated (or Jack)
1 tablespoon olive oil
1 tablespoon red wine vinegar
1 teaspoon agave nectar
2 tablespoons vegan mozzarella cheese or 2 tablespoons vegan mozzarella cheese, grated

Steps:

  • Preheat your oven to 350 degrees F. Start by preparing a cake tin by greasing with oil or Earth Balance type spread, dust with flour well.
  • Combine all the crust ingredients in a large bowl. You'll likely need to add quite a bit extra flour to get a soft, kneadable dough. Roll it out on a floured surface to about 12" round. Drag the bottom of it through corn meal then position in the cake pan (I usually place the tin upside down on the dough, on a chopping board, and then flip the entire thing over). The dough is quite sturdy and elastic if you work with it right away.
  • Fix your edges and then brush the crust lightly with oil. Poke a few holes in the bottom and then blind bake for 10 minutes. You'll want to protect the edges with some strips of parchment or foil, otherwise it will burn.
  • Next start on the filling by sauteing the shallots, mushrooms and bell pepper in the olive oil over medium heat. Let them get nice and caramelized, but watch not to burn. Add in the cumin, red pepper flakes, parsley and lemon juice and set aside off the heat.
  • Using a blender or food processor whiz together until smooth the silken tofu, arrowroot powder, S&P, soy milk and nutritional yeast, nuts and agave nectar. It should be a thick milky white mixture with no lumps. Fold into the sauteed veg and check seasoning. You may wish to add extra fresh parsley here. Fold in the grated vegan mozza the pour the entire mixture into the crust.
  • Mix the topping ingredients of oil, vinegar and agave together and then pour over top, getting it as even as you can without mixing it inches Sprinkle with the last 2 tbsp of vegan mozza (or more if you like). You can also add a few lemon slices to the top before baking.
  • Bake at 375 for 45 minutes or until top is brown and edges are firm. Keep those strips of parchment or foil handy and use again once the edges are browning up.
  • If the centre still seems soft that's probably OK, it will firm up as it cools - you should let it cool for one hour.

1/4 c each fresh cilantro and parsley chopped
3 Tbsp peanut oil
4 clove garlic minced
3 Tbsp rice vinegar
1 Tbsp miso paste
4 salmon fillets
8 oz oyster mushrooms chopped
1 lb asparagus trimmed

Steps:

  • 1. Mix the cilantro, parsley, oil, garlic, vinegar, and miso paste together. Spread 2 tbsp. on to the salmon fillets. Spread another 3 tbsp. over the asparagus. Add the oyster mushrooms to the remaining herb/miso mixture.
  • 2. Get your grille hot. Place a grille mat over the top. Add the salmon, mushrooms and asparagus to the grille. Brush the remaining herb/miso mixture while grilling.
  • 3. Grill the salmon and veggies 6 to 8 minutes or until desired doneness.
  • 4. Serve the mushrooms on top of the salmon with the asparagus on the side.

Tips:

  • Choose the right mushrooms. Cremini, shiitake, oyster, and maitake mushrooms are all great choices for this recipe.
  • Clean the mushrooms properly. Use a damp cloth to wipe away any dirt or debris. Do not wash the mushrooms under running water, as this can make them soggy.
  • Slice the mushrooms evenly. This will help them cook evenly.
  • Use fresh herbs. Fresh herbs will give your mushrooms the best flavor. If you don't have fresh herbs on hand, you can use dried herbs, but reduce the amount by half.
  • Don't overcrowd the pan. If you overcrowd the pan, the mushrooms will not cook evenly and will become soggy.
  • Cook the mushrooms over medium-high heat. This will help them brown quickly and develop a nice flavor.
  • Season the mushrooms to taste. Salt, pepper, and garlic powder are all good basic seasonings.
