4 chicken breasts
100 ml water
1 tablespoon vinegar
1 tablespoon soy sauce
1 tablespoon brown sugar
1 tablespoon mixed herbs (thyme, rosemary, marjoram)
1/2 teaspoon salt
black pepper
1 -2 clove garlic, crushed
1 tablespoon parsley
1 egg yolk
2 -3 tablespoons olive oil
1 teaspoon light French Dijon mustard
50 ml chopped parsley
1 teaspoon mixed herbs (thyme, rosemary, marjoram)
200 ml creme fraiche
1 -2 clove garlic, crushed
salt and pepper

Steps:

  • Mix all ingredients for the marinade.
  • Put the chicken breasts in the marinade and leave for 1 hour.
  • While the chicken is soaking in the marinade make the sauce as follows:.
  • Put the egg yolk in a bowl.

2 tsp minced onion
2 tsp roasted garlic powder
1/2 tsp black pepper
1/2 tsp coriander
1/2 tsp parsley
1/2 tsp paprika
1/2 cup olive oil
1/4 cup vinegar
2 lbs boneless, skinless chicken breasts

Steps:

  • Mix together sea salt, minced onion, roasted garlic powder, black pepper, coriander, parsley, and paprika.
  • Put the spice mixture, olive oil, and vinegar into a gallon sized ziptop bag. Add two pounds of boneless, skinless, chicken breasts. Toss to coat well, place in the fridge and marinate the chicken for 30 minutes.
  • Grease the grill grates, discard the marinade and grill the chicken over medium high heat for about 5 minutes per side for a total of about 10 minutes or until chicken reaches an internal temperature of 160°F.

1 bunch scallions, chopped
1/2 bunch cilantro, plus more for garnish
5 garlic cloves, roughly chopped
1 jalapeño, seeded if you like
1/4 cup fish sauce
1 1/2 tablespoons honey
Juice of 2 limes, plus 1 lime for garnish
3 tablespoons neutral oil, such as sunflower or grapeseed
2 pounds boneless chicken thighs, preferably with skins attached (ask your butcher)
Green papaya salad, for serving (optional)

This marinade is so flavourful on its own that you don't need to add anything else to this dish! You could marinade the chicken overnight but the marinade is so flavourful we just cook it without marinading overnight.

1 (375 ml) jar diana marinade, Garlic & Herbs flavour
2 cups white rice
