GRILLED LEG OF LAMB WITH GARLIC AND HERB LEMON MARINADE

Grilled Leg of Lamb With Garlic and Herb Lemon Marinade image

This is really the only recipe I use when I grill a leg of lamb. Plan ahead, the lamb needs to marinate 24 hours or overnight. This marinade can also be used for lamb chops. A butterflied leg of lamb is with the bones removed and cut to spread open, you can ask your butcher to remove the bones and butterfly it for you. If you prefer a more lemony taste then thinly slice half of another lemon, leave the peel on, and just throw the slices inside the bag or bowl with along with the other marinade. If desired you can also stuff the lamb with garlic cloves as well as adding the minced garlic in with the marinade. Grilling time depends on size of lamb. This recipe produces an excellent grilled lamb that melts in your mouth, try to not overcook the lamb, for best results leave slightly pink in the middle.

ARMENIAN HERB MARINADE GRILLED CHICKEN BREASTS

Armenian Herb Marinade Grilled Chicken Breasts image

This is THE most AWESOME grill marinade I've ever tasted in my life! I don't know where my Mom got this, but there is no match that I've ever known of...it is simplicity and freshness, yet rich, robust and succulent! I haven't told you this one yet, because I was entering it in a grilling contest for a Weber grill, but I can't hold back any longer! It is wonderful for chicken breasts and also for lamb. My Mom used to make chicken and lamb kabobs with this marinade and we always wanted more!!! NOTE: Prep time does not include the 24-48 hours marinating time. UPDATE: My grill has died....So in desperation to taste this chicken again, I tried Bobo3039's suggestion about baking it in a 350 degree oven...Results were wonderful!!! (Still missed that charcoal essence, but one must "roll with the punches" and make do...In this case, Bobo3039 was right on the money!)

  • NOTE: This is excellent served leftover, cold on a Caesar salad!

LEMON, HERB & GARLIC MARINADE

Lemon, Herb & Garlic Marinade image

I've adapted this from a Jamie Oliver recipe. Jamie makes it with his 'flavour shaker' but as most people probably don't have one - you can use a mortar and pestle. Use this marinade for steak, chicken or fish. It imparts a wonderful flavour. We had it with steak and it made it beautifully moist and tender and lemony - quite a different taste for steak but absolutely delicious! Quantities given should make enough to marinade 2-3 steaks or 2 large chicken breasts or 4 fillets of fish.

FRESH HERB AND GARLIC MARINADE

Fresh Herb and Garlic Marinade image

Categories     Garlic

Number Of Ingredients 0

Steps:

  • Whisk together 1 cup extra-virgin olive oil, 1 cup coarsely chopped mixed fresh herbs (such as oregano, thyme, savory, flat-leaf parsley, and rosemary; chop extra and reserve for garnish), 12 coarsely chopped garlic cloves, finely grated zest of 2 lemons, 1 1/2 teaspoons coarse salt, and 1 teaspoon freshly ground pepper in a nonreactive dish. Makes enough for 2 1/2 pounds meat or fish plus more for brushing. Refrigerate until ready to use, up to 1 day.

Tips:

  • Use fresh herbs: Fresh herbs impart the most flavor to your marinade. If you can, use herbs that you have grown yourself or that you have purchased from a farmers market.
  • Choose the right herbs: Some herbs pair well with certain types of meat. For example, rosemary and thyme are good choices for lamb, while oregano and basil are good choices for chicken.
  • Don't overdo it: A little bit of herb marinade goes a long way. If you use too much, it can overwhelm the flavor of the meat.
  • Let the meat marinate for at least 30 minutes: This will give the marinade time to penetrate the meat and infuse it with flavor.
  • If you're short on time, you can marinate the meat for as little as 15 minutes: However, the longer you marinate the meat, the more flavor it will absorb.
  • You can marinate the meat in the refrigerator or at room temperature: If you marinate the meat at room temperature, make sure to do so for no more than 2 hours.
  • Discard the marinade after you're done: The marinade can contain harmful bacteria that can contaminate the meat.

Conclusion:

Herb marinades are a great way to add flavor to your meat. They're easy to make and can be used on a variety of different meats. With a little bit of planning, you can create a delicious and flavorful meal that your family and friends will love.
