HERB-ROASTED TURKEY BREAST

Herb-Roasted Turkey Breast image

Rather than roast an entire bird, try Ina Garten's Herb-Roasted Turkey Breast for a flavorful alternative. Rosemary, sage and thyme star in this recipe.

Provided by Ina Garten

Categories     main-dish

Time 2h40m

Yield 6 servings

Number Of Ingredients 11

1 whole bone-in turkey breast, 6 1/2 to 7 pounds
1 tablespoon minced garlic (3 cloves)
2 teaspoons dry mustard
1 tablespoon chopped fresh rosemary leaves
1 tablespoon chopped fresh sage leaves
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons good olive oil
2 tablespoons freshly squeezed lemon juice
1 cup dry white wine

Steps:

  • Preheat the oven to 325 degrees F. Place the turkey breast, skin side up, on a rack in a roasting pan.
  • In a small bowl, combine the garlic, mustard, herbs, salt, pepper, olive oil, and lemon juice to make a paste. Loosen the skin from the meat gently with your fingers and smear half of the paste directly on the meat. Spread the remaining paste evenly on the skin. Pour the wine into the bottom of the roasting pan.
  • Roast the turkey for 1 3/4 to 2 hours, until the skin is golden brown and an instant-read thermometer registers 165 degrees F when inserted into the thickest and meatiest areas of the breast. (I test in several places.) If the skin is over-browning, cover the breast loosely with aluminum foil. When the turkey is done, cover with foil and allow it to rest at room temperature for 15 minutes. Slice and serve with the pan juices spooned over the turkey.

Tips:

  • Use fresh herbs: Fresh herbs offer more pronounced flavors compared to dried herbs, elevating the taste of your herb-crusted turkey tenderloin.
  • Choose a variety of herbs: Don't limit yourself to just one or two herbs. Experiment with different combinations to create a complex and flavorful crust. Some popular choices include rosemary, thyme, sage, and parsley.
  • Chop the herbs finely: Finely chopped herbs will adhere better to the turkey tenderloin and distribute their flavor more evenly throughout the dish.
  • Use a flavorful oil: The oil you use to coat the turkey tenderloin before applying the herb crust will also contribute to the overall flavor. Opt for an oil with a rich taste, such as olive oil or melted butter.
  • Don't overcrowd the pan: When searing the turkey tenderloin, make sure to give it enough space in the pan so that it can brown evenly. Overcrowding the pan will result in steamed turkey instead of seared.
  • Use a meat thermometer: To ensure that the turkey tenderloin is cooked to perfection, use a meat thermometer to check its internal temperature. The ideal internal temperature for cooked turkey is 165°F (74°C).
  • Let the turkey rest: After cooking the turkey tenderloin, allow it to rest for a few minutes before slicing and serving. This will help the juices redistribute throughout the meat, resulting in a more tender and flavorful dish.

Conclusion:

Herb-crusted turkey tenderloin is a delicious and versatile dish that can be enjoyed for lunch, dinner, or even as an appetizer. With its crispy herb crust, tender and juicy interior, and ease of preparation, this dish is sure to become a favorite in your kitchen. So gather your ingredients, preheat your oven, and get ready to indulge in a culinary delight that will tantalize your taste buds and leave you craving for more.
