2 tablespoons olive oil
2 shallots, minced
1 pound ground turkey
1/4 cup loosely packed fresh mint leaves, finely chopped
1/4 cup loosely packed fresh parsley leaves, finely chopped
2 teaspoons Dijon mustard, plus more for serving
1 teaspoon coarse salt
1/4 teaspoon freshly ground pepper
4 rustic rolls, for serving
Lettuce, for serving

Steps:

  • Heat 1 tablespoon oil in a medium saute pan over medium heat. Add shallots; cook, stirring, until they are soft and translucent, about 2 minutes. Remove from heat, and set aside.
  • In a large bowl, mix together turkey, mint, parsley, 2 teaspoons of mustard, and shallots. Season with salt and pepper. Divide into four equal parts, and form into patties.
  • Heat remaining tablespoon oil in a large saute pan over medium heat. Add patties, and cook until underside is brown, about 3 1/2 minutes. Turn, and continue cooking until other side is brown and center is no longer pink, about 4 minutes. Transfer to plates; serve immediately with rolls, lettuce, mustard, and tomato salad.

Extra-virgin olive oil, for the pan
1 onion, cut into 1/4-inch dice
Kosher salt
4 scallions, chopped
2 cloves garlic, smashed and finely chopped
1-inch piece fresh ginger, peeled and grated
1 1/2 pounds ground dark meat turkey or 50/50 blend turkey
One 8-ounce can water chestnuts, drained and coarsely chopped
1/2 bunch fresh cilantro leaves, finely chopped
1/4 cup soy sauce, plus more to taste
2 tablespoons sambal oelek, plus more to taste
4 sesame burger buns
4 slices Cheddar
1/4 cup mayo
4 slices beefsteak tomatoes
4 slices raw red onion
8 Romaine lettuce leaves

Steps:

  • For the burgers: Coat a large saute pan with olive oil. Add the onions, season with salt and bring to a medium-high heat. Cook the onions, stirring occasionally, until they are soft and very aromatic, 7 to 8 minutes. Add the scallions, garlic and ginger and cook until fragrant, 1 to 2 minutes. Turn off the heat and let cool.
  • In a large bowl, combine the turkey, water chestnuts, cilantro, soy sauce, 1 tablespoon of the sambal oelek and the onion mixture. (Reserve the onion pan to cook the burgers in later.) Using your hands, squish everything together until really well combined.
  • Make and cook a little tester patty to be sure that the turkey is really well seasoned. Re-season if needed. If the burger is missing salt add more soy or just give a little sprinkey dink of salt.
  • When the burger mix is seasoned appropriately, shape it into 4 equal patties.
  • Coat the saute pan with olive oil and heat over medium-high heat. Place the burgers in the pan. Be sure not to crowd the pan, if you need to work in batches go ahead! Cook the burgers for 5 to 6 minutes on each side.
  • Preheat the oven to high broil.
  • Transfer the burgers to a baking sheet lined with a wire rack. Place the buns, cut side up, on the same rack. Transfer to a low rack in the oven and broil until the burgers are cooked through and the buns are toasted, 2 to 3 minutes. Remove the buns from the rack and top the burgers with cheese. Return to the oven and broil until the cheese melts, about 1 minute.
  • Stir to combine the mayonnaise and remaining 1 tablespoon sambal oelek in a small bowl. Schmear each side of the bun lightly with the sambaal mayo. Put a burger on each of the bottom buns and top each burger with a slice of tomato and onion and a piece of lettuce. Close up each burger, give each one a little squish and eat em' up!

1/4 cup fresh basil, chopped
2 teaspoons lemon rind, grated
3/4 teaspoon garlic, minced
1/8 teaspoon salt
1/4 teaspoon pepper
4 kaiser rolls, split
shredded spinach leaves
tomatoes, slices

Steps:

  • Combine first 6 ingredients in a large bowl until blended. (Do not overwork meat mixture.) Shape mixture into 4 (5-inch) patties.
  • Grill, covered with grill lid, over medium-high heat (350 to 400 degrees) 5-6 minutes on each side or until done.
  • Scoop out the soft centers from bottom half of rolls, leaving 1/4 inch-thick shells. Place burgers in shells; top evenly with spinach and tomato slices, and cover with roll tops.

Don't, as it does not improve the burger, rather it takes the seasonings out of balance. Instead you might try replacing the black pepper with some crushed red pepper. My suggested condiments are fresh tomatoes, grilled red onion slices and some Dijon mustard. Based on a recipe from Cooking Light 2000. WW 4pts per burger.

Build your own burger - the recipe here is for a low-fat cranberry and herb turkey burger, with LOTS of options! Plump semi-dried Canadian cranberries and fresh chopped herbs are added to lean, low-fat turkey mince for a moist and flavourful burger, and without the guilt! I have offered the bacon, cheese, assorted condiments and the burger bun as an option; if you are REALLY watching your calories and fat intake, just go with the plain burger and a lovely crispy mixed salad on the side. Turkey mince can be a little bland, so the addition of the herbs and cranberries adds a real flavour injection. Try to use freshly chopped herbs for the best flavour, if you do use dried herbs, reduce the quantities by half, as dried herbs are more pungent than fresh. 1/4 cup fresh breadcrumb
1 teaspoon extra virgin olive oil (3-4 sprays) or 1 teaspoon low-fat cooking spray (3-4 sprays)
1 small onion, peeled and finely diced
1 tablespoon chopped fresh thyme
1 1/2 teaspoons chopped fresh sage
1/4 teaspoon salt
1/2 teaspoon fresh ground pepper
1/4 cup dried cranberries or 1/4 cup craisins
1 lb 93% lean ground turkey (turkey mince)
6 slices Canadian bacon (optional)
6 toasted hamburger buns (optional)
cheese slice
cranberry sauce
ketchup
mustard
dill pickle
sliced fresh tomato
lettuce
sliced onion rings
relish
mayonnaise
pickle
mixed salad green

Steps:

  • If grilling the burgers, preheat grill to medium-high. (You can also pan-fry or barbeque these burgers.).
  • Meanwhile, heat oil in a large frying pan/skillet over medium heat, or spray three or four sprays of low fat spray. Add the diced onion and cook, stirring, for about 5 minutes. Add the thyme, sage, salt and pepper; cook until fragrant, for about 30 seconds more.
  • Transfer the mixture to a large mixing bowl and add the breadcrumbs and cranberries, stir to combine. Let the mixture cool for 5 minutes. Add the turkey mince and stir until combined; do not overmix. Form the mixture into 6 burgers/patties.
  • To cook on the stovetop: Coat a large nonstick frying pan/skillet, preferably cast-iron, with cooking spray and set over medium-high heat for 2 minutes. Add the burgers/patties, reduce heat to medium, and cook for about 5 minutes. Turn and cook on the other side for about 2 minutes. Cover and continue to cook until lightly browned but still juicy (the juices should run clear, not pink), about 3 - 4 minutes more.
  • To grill: Oil the grill rack and grill the burgers for 5 to 6 minutes per side, flipping gently to avoid breaking them.
  • Serve the burgers immediately, inside a burger bun with the optionial extras and condiments as suggested. A mixed salad is also a great accompaniment.
  • NB: If using the bacon or the cheese slices, grill or fry the bacon slices for about 2 to 3 minutes beforehand and then place the bacon or cheese slice on top of a cooked burger for the last 2 - 3 minutes of grilling or cooking time.
