HELOISE'S CAKE MIX COOKIES

Heloise's Cake Mix Cookies image

Fast and easy when you don't have enough time to prepare cookies from scratch. If you mix them by hand, they will be flatter and more like a cookie. If you use a mixer, they will be puffier and more like cake. The cake-like version is good with a simple confectioner sugar & milk (or juice if you used an orange or lemon cake mix) glaze.

Time 8m

Yield 24 cookies

Number Of Ingredients 3

1 (18 ounce) box cake mix, unprepared (any flavor)
1/2 cup vegetable oil
2 large eggs

Steps:

  • Mix all ingredients well to remove lumps.
  • Stir in raisins and/or nuts and/or chocolate chips if you so desire.
  • Drop by teaspoonfuls on an ungreased baking sheet about 2-inches apart.
  • Bake at 350°F for 8-10 minutes.

Tips:

  • Soften the butter: Make sure the butter is at room temperature before creaming it with the sugar. This will help the cookies to be light and fluffy.
  • Chill the dough: Chilling the dough for at least 30 minutes will help to prevent the cookies from spreading too much in the oven.
  • Use a cookie scoop: A cookie scoop will help you to get evenly-sized cookies. This will help them to bake evenly.
  • Don't overbake the cookies: The cookies are done baking when the edges are just starting to turn golden brown. If you overbake them, they will be dry and crumbly.
  • Let the cookies cool completely before storing them: This will help to prevent them from sticking together.
