Number Of Ingredients 11

4 cups apple cider vinegar
1 cup sugar
1 1-inch piece ginger, grated
1 tablespoon dry mustard
1 tablespoon turmeric
3 tablespoons mustard seeds
3 tablespoons celery seeds
1 1/2 tablespoons pickling spice
Kosher salt
2 pounds firm heirloom tomatoes (mixed colors and varieties), cut into large chunks
2 medium onions, sliced

Steps:

  • Combine the vinegar, sugar, ginger, dry mustard, turmeric, mustard seeds, celery seeds, pickling spice and 1 teaspoon salt in a large pot. Bring to a boil over high heat, then reduce the heat and simmer 15 minutes to extract the flavors of the spices.
  • Return to high heat; once the mixture is boiling and steaming, add the tomatoes and onions, stirring to coat everything evenly. Reduce the heat and simmer 5 minutes. Remove from the heat and cool to room temperature.

Tips:

  • Choose the ripest, freshest heirloom tomatoes you can find, as their flavor will be the star of the chow chow.
  • Use a variety of heirloom tomatoes to create a complex flavor profile. For example, try using a mix of sweet, tart, and juicy tomatoes.
  • Be sure to remove the skins from the tomatoes before chopping them. This will help to create a smooth, creamy texture in the chow chow.
  • Use a sharp knife to chop the vegetables so that they are all uniform in size. This will help them to cook evenly.
  • Be sure to cook the chow chow over low heat so that the flavors have time to develop.
  • Taste the chow chow as it cooks and adjust the seasonings as needed.
  • Canning the chow chow is a great way to preserve it for later use. Be sure to follow the canning instructions carefully to ensure that the chow chow is safe to eat.

Conclusion:

Heirloom tomato chow chow is a delicious and versatile condiment that can be enjoyed in many different ways. It is perfect for adding a tangy, sweet flavor to sandwiches, burgers, and hot dogs. It can also be used as a dipping sauce for vegetables or crackers. And it is even good enough to eat on its own!
