Provided by Bobby Flay

Categories     side-dish

Time 20m

Yield 4 servings

Number Of Ingredients 12

4 ripe heirloom tomatoes (different varieties and colors) or beefsteak tomatoes, sliced 1/4-inch thick
Salt and freshly ground black pepper
1 pound fresh buffalo mozzarella, sliced 1/4-inch thick
Green Chile-Cilantro Oil, recipe follows
Chipotle Vinegar, recipe follows
2 cups extra-virgin olive oil
1 poblano chile, grilled, peeled, stemmed, and coarsely chopped
1/4 cup cilantro leaves
Salt
1 cup red wine vinegar
2 teaspoons chipotle pepper puree
Salt

Steps:

  • Place a tomato slice on each of 4 plates. Season with salt and pepper. Top with a slice of cheese and repeat to make 3 layers, like a Napoleon with 3 tomato slices and 2 slices of cheese. Drizzle with the Green Chile-Cilantro Oil and Chipotle Vinegar and serve.;
  • Combine all ingredients in a blender and blend for 5 minutes.
  • Blend all ingredients in a blender until smooth.

Tips:

  • Select the ripest tomatoes: Use ripe, in-season tomatoes for the best flavor. Look for tomatoes that are deep red in color and have no bruises or blemishes.
  • Slice the tomatoes evenly: Cut the tomatoes into uniform slices so that they cook evenly. Use a sharp knife to make clean, even cuts.
  • Use fresh mozzarella cheese: Fresh mozzarella cheese is essential for this salad. It has a mild, milky flavor that pairs well with the tomatoes. Avoid using pre-shredded mozzarella, as it will not melt as well.
  • Drizzle with a good quality olive oil: Use a good quality olive oil to dress the salad. Extra virgin olive oil is the best choice, as it has a fruity, flavorful taste.
  • Season with salt and pepper: Season the salad with salt and pepper to taste. Freshly ground black pepper will provide the best flavor.
  • Add fresh herbs for extra flavor: Fresh herbs, such as basil, oregano, or thyme, can be added to the salad for extra flavor. Chop the herbs finely before adding them to the salad.

Conclusion:

Heirloom Tomato and Mozzarella Salad is a simple, refreshing salad that is perfect for summer. The ripe tomatoes, fresh mozzarella cheese, and fragrant herbs combine to create a delicious and flavorful dish. This salad is also very easy to make, and it can be ready in just a few minutes. Serve this salad as a starter or main course, or pack it for a picnic or lunch on the go.
