Extra virgin olive oil
1/2 cup grated Parmesan cheese
2 tsp fresh thyme leaves (no stems)
1 tsp dried oregano
1/2 tsp sweet paprika
1/2 tsp black pepper
pinch kosher salt

Steps:

  • Heat oven to 350 degrees F.
  • In a bowl, mix together the grated Parmesan, thyme and spices until well combined.
  • Prepare a large baking sheet topped with a wire baking rack like this one. Lightly brush the baking rack with extra virgin olive oil (or use a healthy cooking spray.) Arrange the zucchini sticks, skin-side down, on the baking rack and brush each zucchini stick with extra virgin olive oil

1/4 teaspoon black pepper
1 1/2 tablespoons extra-virgin olive oil
1 tablespoon freshly squeezed lemon juice
2 tablespoons chopped fresh herbs (such as parsley, basil, dill, or a mix (optional))

Steps:

  • Preheat the oven to 400 degrees F. Coat a cooling rack with nonstick spray and place on a rimmed baking sheet.
  • In a small bowl, stir together the Parmesan, Italian seasoning, salt, and pepper.

1 -1 1/2 cup parmesan cheese, grated fresh (not the stuff in the green tube!)

Steps:

  • Slice the zucchini into long wedges, roughly the size of 'steak fry' potatoes.
  • Place in one layer in a rectangular oven baking dish.
  • Pour container of unwhipped cream over.

1/2 teaspoon salt

1 slice bread
1 large egg, slightly beaten
1/2 cup shredded cheddar cheese
1/4 cup shredded cheddar cheese

Steps:

  • Preheat oven to 350 degrees.
  • Cook zucchini until tender. (On the stove, add a little water, cover and cook about 15 minutes. In the microwave, cook about 5 minutes.).
  • Either on the stove or in the microwave, melt butter with onions in it.

3 -4 zucchini, peeled and sliced thinly
1 large onion, sliced thinly
1 tablespoon fresh garlic, chopped
1 tablespoon oregano
1 tablespoon basil
1/2 cup real butter
2 (10 ounce) cans pillsbury crescent roll dough
2 cups mozzarella cheese
1/2 cup parmesan cheese
3 eggs

Steps:

  • Preheat over to 350°F.
  • in large skillet melt the butter and fry the onions and zucchini, adding the garlic, oregano and Basil, until they are lightly browned and onions have lost their color and become clear.
  • In a large bowl mix the cheeses and eggs add salt and pepper to taste.
  • set aside.
  • In a 9 x 11 casserole dish press the crescent roll dough into the bottom of the dish making a pastry shell for the zucchini and cheese mixtures.
  • When zucchini is done, pour into the waiting cheese and egg mixture and mix together.
  • Then pour into the casserole dish.
  • Bake for approx 20 minutes or until golden and bubbly. Enjoy!
  • Note: I'm not real sure about the measurements for the oregano and the basil, as I just dump until it looks good to me.
