SUNNY'S PERFECT SCRAMBLED CHEESY EGGS

Steps:
- In a large nonstick pan with sloped sides (even a wok shape works), melt the butter over medium-low heat, being careful to not brown the butter. If it begins to bubble, the heat is too high, so lower the heat to cook the eggs properly. (Slow and low like BBQ is the way to go with eggs.)
- Meanwhile, in a large bowl, add the eggs and 1 teaspoon cold water. Vigorously whisk until frothy and smooth. Swirl the pan around to coat the butter on the bottom and up the sides. Pour the eggs into the pan and let sit for a few seconds. When the eggs begin to lightly set on the bottom, use the whisk to gently beat the eggs, then allow them to sit for just a few seconds between beating them again. Curds will begin to form and increase throughout the cooking time. Repeat this process of whisking then resting the eggs for a few seconds until about 50 percent of the eggs are set and the rest are still wet. At this point, sprinkle the eggs with a pinch of salt and pepper and continue to whisk and rest alternately. Once the eggs are 75 percent done, add the cheese and from this moment, continue to whisk the eggs until done. This entire process from pouring in the eggs to them being finished should take 8 to 12 minutes; this isn't a race, only a journey to the best scrambled eggs ever. Remove from the heat and continue to scramble in the last seconds. Serve warm.

EGGS IN PURGATORY
It's unclear whether "purgatory" refers to the bubbling red tomato sauce used to poach the eggs in this easy skillet meal or the fire of the red-pepper flakes that the sauce is spiked with. In either case, this speedy Southern Italian dish, whipped up from pantry staples, makes for a heavenly brunch, lunch or light supper. Note that the anchovies are not traditional, but they add a subtle fishy richness to the tomatoes. However, feel free to leave them out.

Steps:
- In a large skillet with a lid, heat oil over medium heat. Add the sliced garlic, anchovies and red-pepper flakes and cook just until the garlic turns golden brown at the edges, about 1 minute. Stir in tomatoes, salt, pepper and basil sprig, and turn the heat to medium-low.
- Simmer, squashing tomato pieces with a wooden spoon or a potato masher, until the tomatoes break down and thicken into a sauce, 20 to 25 minutes. Stir in Parmesan, butter, salt and red-pepper flakes to taste.
- Using the back of a spoon, make 6 divots into the tomato sauce, then crack an egg into each divot. Cover the pan and let cook until the eggs are set to taste, about 2 to 3 minutes for runny yolks. (If the pan is not covered, the eggs won't cook through, so don't skip that step.)
- While the eggs are cooking, toast bread in a toaster or under the broiler. Rub warm toast with the cut garlic clove, drizzle with oil, and sprinkle with salt.
- To serve, sprinkle eggs with more Parmesan and chopped herbs, then spoon onto plates or into shallow bowls. Serve with garlic toast and pass pepper flakes at the table.

- Let it sit for another 10 seconds then stir and fold again.
- Repeat until the eggs are softly set and slightly runny in places. Remove from the heat and leave for a moment to finish cooking.
- Give a final stir and serve the velvety scramble without delay.

HEAVENLY SCRAMBLED EGGS
The sour cream, believe it or not, makes scrambled eggs heavenly. They are so fluffy and good. I was told years ago that you never put milk in scrambled eggs, BUT water. Can you believe it? I tried it and never put milk in them again.

Tips:
- Use fresh eggs. Fresh eggs are essential for making fluffy, delicious scrambled eggs. Older eggs will be more watery and won't scramble as well.
- Beat the eggs thoroughly. Beating the eggs thoroughly before cooking will help to incorporate air into the mixture, which will make the eggs light and fluffy. You can beat the eggs with a fork, whisk, or blender.
- Cook the eggs over low heat. Cooking the eggs over low heat will help to prevent them from overcooking and becoming tough. Stir the eggs constantly while they are cooking to ensure that they cook evenly.
- Don't overcook the eggs. Overcooked eggs will be tough and rubbery. Cook the eggs until they are just set, then remove them from the heat. The residual heat will continue to cook the eggs.
- Add ins. Scrambled eggs are a great way to use up leftover vegetables, cheese, or meat. Simply add your desired ingredients to the eggs before cooking.
Conclusion:
Scrambled eggs are a quick, easy, and delicious breakfast, lunch, or dinner option. By following these tips, you can make perfect scrambled eggs every time. So next time you're looking for a simple and satisfying meal, give scrambled eggs a try.
