HOT FUDGE SAUCE
This recipe for a classic hot fudge sauce came to The Times in 2004, from Kay Rentschler. "A well-constructed homemade hot fudge sauce moves forward with dark smoky accents and arrives with plenty of chew," she wrote. Here, bittersweet chocolate and high-fat Dutch process cocoa bring that smokiness, while heavy cream, butter and sugar mellow it out. It's a perfect contrast to the milky sweetness of a sundae loaded with vanilla ice cream and whipped cream.

HEAVENLY HOT FUDGE SAUCE
I got this recipe from my sister. She always makes it as a Christmas gift each year. She puts them in small jars with a ribbon, and mine is always gone really quickly! I think it is a more upscale version--it is not syrupy sweet, but has a richer, more dense flavor. She got this from a magazine a long time ago, but I don't remember which one. Cooking time includes cooling time. Enjoy!

Steps:
- 1. Melt margarine and chocolate in top of double boiler. Add sugar a little at a time and when all sugar is added, add milk and cook until satiny.
- 2. Bake a Devils Food Cake mix in 9x13 pan. Cool.
- 3. When ready to serve cut in squares and split. Put slice of vanilla ice cream in middle and pour fudge sauce over the top.
Tips:
- For a richer flavor, use semisweet or bittersweet chocolate chips instead of milk chocolate chips.
- If you don't have a candy thermometer, you can test the doneness of the sauce by dropping a small amount into a glass of cold water. If the sauce forms a soft ball, it is ready.
- If the sauce is too thick, you can thin it out with a little bit of milk or cream.
- If the sauce is too thin, you can thicken it up by simmering it for a few more minutes.
- Serve the sauce warm over ice cream, cake, or brownies.
Conclusion:
This heavenly hot fudge sauce is the perfect topping for any dessert. It is easy to make and can be tailored to your own taste. So next time you are looking for a delicious and decadent treat, give this recipe a try.
