1 Oikos Vanilla Greek Yogurt
3/4 C Unsalted Butter (room temp)
1/4 C Coconut Oil
1/4 TSP Salt
1/4 TSP Nutmeg
1/4 TSP Cinnamon
2 C Whole Wheat Flour
1/2 C Semi Sweet Morsels

Steps:

  • PREHEAT oven to 375.
  • In a large mixing bowl mash bananas.
  • Add in eggs, yogurt, room temperature butter and coconut oil, mix until combined.
  • Next add in salt, nutmeg, cinnamon and flour, stir until combined folding in morsels.
  • In a greased bread dish pour mixture evenly.
  • Bake for 30-40 minutes until golden brown and toothpick comes out clean.

I got this recipe from a wonderful friend who is a chef and cooking instructor in Canada. I love it because it is super-moist, and has intense flavor. In a test of 5 different banana bread recipes, this is the one my husband and neighbors liked the best.

Number Of Ingredients 10

2 -3 bananas, black ripe
1/3 cup buttermilk
1 teaspoon baking soda
3/4 cup dark brown sugar
1/2 cup unsalted butter
1 egg
1 1/3 cups flour
1 teaspoon cinnamon
1 teaspoon baking powder
1 teaspoon vanilla or 1 teaspoon dark rum (optional)

Steps:

  • Mash or purée the bananas and buttermilk until smooth.
  • Add the baking soda and mix.
  • This activates the baking soda and neutralizes the soda taste.
  • Cream the brown sugar and butter together until smooth.
  • Beat in the egg.
  • Add the banana purée and combine.
  • The mixture often appears curdled at this stage.
  • Add the baking powder to the flour; add gradually to the banana mixture.
  • Stir just enough to combine evenly.
  • Flavour with the extract.
  • Pour into sprayed or greased pans.
  • Fill the pans 2/3 full for even cooking.
  • Bake in a preheated 375°F oven until set in the centre.
  • A larger loaf pan will take about 45-50 minutes.

1/2 cup butter
1/2 cup brown sugar, firmly packed
1 teaspoon vanilla extract
1/4 teaspoon banana extract (optional)
3/4 teaspoon baking soda
1/2 teaspoon salt
3 large bananas, cut into chunks
1/4 cup honey
2 large eggs
2 cups whole wheat flour
1/2 cup walnuts, chopped

Steps:

  • Preheat your oven to 350°F Lightly grease an 8 1/2" x 4 1/2" or 9" x 5" loaf pan.
  • In a large bowl, beat together the butter and sugar until smooth. Add the vanilla, baking soda, salt, and bananas, beating until well combined. The mixture will be fairly smooth, with some scattered small chunks of banana.
  • Beat in the honey and eggs.
  • Add the flour, then the walnuts, stirring until smooth.
  • Spoon the batter into the prepared pan, smoothing the top. Let it rest at room temperature for 10 minutes.
