HEARTY BEEF VEGETABLE STEW
This is a great slow-cooker recipe for beef stew. I've tried many slow-cooker recipes and they always turned out a little "odd", until I tried this one. This tastes wonderful, is healthy for you and the beef is very tender. Perfect recipe for fall and winter. I might try adding some frozen peas in this next time. Comes from Light&Tasty.

- 2. Next add carrots, celery, and thyme and continue sauteing until veggies are almost tender.
- 3. Add all remaining ingredients and allow to simmer for at least 20 minutes on med-low heat. (If you have time to simmer longer, the flavor will be much stronger.)
- 4. Serve with a little bit of grated parmesan or pecorino romano cheese on top, and add some crusty garlic bread on the side to complete you meal!
Tips:
- Select fresh and high-quality vegetables: Choose vegetables that are firm, brightly colored, and free from bruises or blemishes. Fresh vegetables not only taste better but also retain more nutrients.
- Use a variety of vegetables: Don't limit yourself to just a few types of vegetables. Experiment with different colors, textures, and flavors to create a stew that is both visually appealing and delicious.
- Cut vegetables into uniform pieces: This will ensure that they cook evenly. If you have vegetables of different sizes, cut the larger ones into smaller pieces so that they all cook at the same rate.
- Sauté the vegetables before adding the liquid: Sautéing the vegetables in a little bit of oil or butter will help to develop their flavor and caramelize them slightly. This will give your stew a richer and more complex flavor.
- Use a good quality broth: The broth is the base of your stew, so it's important to use a good one. Look for a broth that is low in sodium and has a rich flavor. You can also make your own broth using bones, vegetables, and herbs.
- Season to taste: Once your stew is simmering, taste it and adjust the seasonings as needed. You may want to add more salt, pepper, herbs, or spices.
- Let the stew simmer for a while: The longer you simmer your stew, the more flavorful it will become. Simmer it for at least 30 minutes, or up to several hours if you have the time.
- Serve with a crusty bread or a side of rice: A hearty vegetable stew is perfect for a cold day. Serve it with a crusty bread or a side of rice to soak up all the delicious broth.
Conclusion:
A hearty vegetable stew is a delicious and nutritious meal that is perfect for a cold day. It is easy to make and can be tailored to your own taste preferences. With a few simple tips, you can make a vegetable stew that is both flavorful and satisfying.
