1 pound ground beef
1 medium onion, chopped
Dash pepper
1 pound process cheese (Velveeta), cubed
1 bottle (8 ounces) taco sauce
1/4 cup water
1 medium tomato, chopped
1 medium green pepper, chopped
1 can (2-1/4 ounces) sliced ripe olives, drained
Tortilla chips

Steps:

  • In a large saucepan over medium heat, cook beef, onion and pepper until meat is no longer pink; drain. Add the cheese, taco sauce and water; stir until cheese is melted. Stir in the tomato, green pepper and olives. Serve warm with chips.

1 lb ground beef
1 can(s) canned tomatoes with green chilies
12 oz cheese, shredded
2 c instant rice
1 pkg taco seasoning mix
8 oz sour cream
tortilla chips

Steps:

  • 1. Cook instant rice according to package directions, set aside.
  • 2. Brown ground beef until fully cooked; drain fat from meat. Add tomatoes, sour cream, taco seasoning mix, and cheese. Stir to combine. Add rice and stir. You can also add 1/2-1 can re-fried beans. If it is a bit too dry, you can add another can of tomatoes or some water to your liking.
