4 cups diced red potatoes (about 1-1/2 pounds)
4 medium carrots, diced
2 green onions, thinly sliced (white and pale green parts only)
2 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar
1 tablespoon plus 2 teaspoons snipped fresh dill, divided
1 teaspoon kosher salt
1/2 teaspoon coarsely ground pepper, divided
1/4 teaspoon crushed red pepper flakes
2 tablespoons crumbled feta cheese
1 tablespoon butter
4 large eggs
2 tablespoons maple syrup

Steps:
