REUBEN PIZZA
This is a great recipe that I got from a friend. If you can't find whole wheat bread dough, I've used white and I've also made my own.

- Preheat the oven to 375 degrees F (190 degrees C). Grease a large pizza pan. On a lightly floured surface, roll the bread dough out into a large circle about 14 inches across. Transfer to the prepared pizza pan. Build up the edges, and prick the center all over with a fork so it doesn't form a dome when baking .
- Bake for 20 to 25 minutes in the preheated oven, or until golden.
- Spread half of the salad dressing over the hot crust. Sprinkle with half of the Swiss cheese. Arrange corned beef over the cheese, then drizzle with the remaining salad dressing. Top with sauerkraut and remaining Swiss cheese. Sprinkle with caraway seed.
- Bake for another 10 minutes in the preheated oven, until cheese melts and toppings are heated through. Sprinkle with chopped pickle. Let stand for 5 minutes before slicing.

- Preheat oven to 425°. Unroll and press dough onto bottom of a greased 15x10x1-in. baking pan. Bake 6-8 minutes or until edges are lightly browned., Meanwhile, in a small bowl, beat cream cheese, soup and salad dressing until blended. In another bowl, toss bread cubes with melted butter., Spread cream cheese mixture over crust; top with corned beef, sauerkraut and cheese. Sprinkle with bread cubes. REUBEN PIZZA
This was on the menu tonight -- it did not disappoint! It's quick, easy, and delicious. My husband says he'd definitely like to see it on the table again :) Perfect Sunday night supper.

Steps:
- 1. Put the sauerkraut into a colander to drain while you roll out your pizza crust.
- 2. Roll out the pizza dough, for a medium size (11") pizza. Sprinkle the caraway over the unbaked crust. Use more or less, to your taste.
- 3. Following the package instructions, pre-cook the pizza dough for about 3/4 of the recommended time. Mine took about 12 minutes at 400*.
- 4. While your crust bakes, roll up your corned beef slices (like a cigar), and cut them into strips (1/2" cuts down the length). Set aside.
- 5. Shred the cheese, or cut the slices into strips. Set aside.
- 6. Remove par-cooked crust from the oven, and spread the dressing over the top of the crust. Use as much or as little as you like.
- 7. Layer the corned beef strips on top of the dressing.
- 8. Pat dry the sauerkraut, making sure it's not too wet, then layer it over the corned beef. You can add more caraway here, if you like.
- 9. Sprinkle the cheese evenly over the top of the pizza. Garnish with whole caraway seed, if desired.
- 10. Return the pizza to the oven and bake an additional 10 minutes, at 350* Remove from the oven and allow to rest a few minutes before cutting.
- 11. Serve, and enjoy with a nice green salad or coleslaw.
- 12. NOTES: If you prefer, use a ready-made pizza crust (like Boboli). Just sprinkle the caraway over the dressing. This recipe is very flexible, and easy to increase for a larger pizza, or decrease if you want a small one. I made this again for the SuperBowl adding pickle relish and topped with french-fried onions -- YUM! *We are gluten intolerant, so I used Pillsbury GF Pizza Dough.
PASTRAMI/REUBEN PIZZA MASH-UP
This pizza is loaded with pastrami and Swiss cheese and is nice and messy, just like a good Reuben sandwich should be.

- Place a pizza stone or an inverted rimmed baking sheet on the bottom rack of the oven and preheat to 500 degrees F.
- Dust a piece of parchment paper lightly with flour. Stretch or roll out the pizza dough into a 12-inch round on the parchment, then transfer the dough on the parchment to a pizza peel or another inverted rimmed baking sheet.
- Brush the pizza all over with the butter and sprinkle with the caraway seeds. Top with half of the Swiss cheese, then sprinkle over 1/4 cup of the sauerkraut. Add the pastrami, overlapping the slices, then top with the remaining slices of Swiss cheese.

- Drizzle the pizza with Russian dressing and top with the remaining 1/2 cup sauerkraut and the gherkins.
HEARTY REUBEN PIZZA

- Heat oven to 425°F. Lightly grease 12-inch pizza pan or 13 x 9-inch pan. Unroll dough place in greased pan. Starting at center, press out with hands. Bake at 425°F. for 9 to 12 minutes or until golden brown.In large skillet, cook onions in margarine until tender. In small bowl, combine salad dressing and mustard blend well. Spread 1/4 cup dressing mixture over partially baked crust. Sprinkle with 1/2 cup of the Swiss cheese. Overlap corned beef slices over cheese and dressing, covering completely. Spread remaining dressing mixture over corned beef. Top evenly with cooked onion slices, sauerkraut and remaining 1 1/2 cups Swiss cheese. Sprinkle with caraway seed. Bake at 425°F. for an additional 10 minutes or until thoroughly heated and cheese is melted.
