HEARTY POTATO SOUP VERDE, GRANDMA W

Hearty Potato Soup Verde, Grandma W image

A hearty potato soup.

Provided by Megan Stewart @GSMegan

Categories     Vegetable Soup

Number Of Ingredients 11

1 tablespoon(s) vegetable oil
2 tablespoon(s) water
1 - onion, finely chopped
4 large potatoes, peeled and cubed
1/3 cup(s) parmesan cheese
1/2 cup(s) chopped parsley
1/8 teaspoon(s) white pepper
10 ounce(s) frozen chopped spinach
- salt and pepper
1/4 cup(s) warm milk
2 tablespoon(s) red wime vinegar

Steps:

  • In deep saucepan, place oil, water and onion and saute until translucent. Add cubed potatoes, cheese, parsley, pepper and frozen spinach with just enough water to cover all ingredients. If it is thick, add more water. Cook, covered, over low heat, stirring occasionally. When potatoes are tender, pour mixture into a blender, half at a time, and blend smooth. Salt to taste, stir in vinegar and warm milk and serve.

Tips:

  • Use a variety of potatoes: Different types of potatoes have different flavors and textures, so using a mix will create a more complex and interesting soup. Good options include russet potatoes, Yukon Gold potatoes, and red potatoes.
  • Don't overcook the potatoes: Overcooked potatoes will become mushy and lose their flavor. Cook them until they are tender but still hold their shape.
  • Use a good quality vegetable broth: The broth is the base of the soup, so it's important to use a good quality broth. Look for a broth that is low in sodium and has a rich flavor.
  • Add plenty of vegetables: Vegetables add flavor, nutrition, and color to the soup. Good options include carrots, celery, onion, garlic, and kale.
  • Season the soup to taste: Add salt, pepper, and other spices to taste. You can also add a squeeze of lemon juice or a dollop of sour cream for extra flavor.
  • Serve the soup with a crusty bread or crackers: Crusty bread or crackers are the perfect accompaniment to potato soup. They help to soak up the broth and add a bit of texture to the soup.

Conclusion:

Potato soup is a hearty, comforting, and delicious soup that is perfect for a cold day. It's also a great way to use up leftover potatoes. With a few simple ingredients and a little bit of time, you can make a delicious potato soup that your whole family will love. So next time you're looking for a quick and easy meal, give this potato soup recipe a try.
