HIGH FIBER BREAD - ABM

High Fiber Bread - Abm image

Submitted to the fatfree.com website by Irene Schmidt. Her comments: "This bread has nice nutty flavor, thanks to the flax seeds. It is good enough to be eaten plain, but sometimes I make a banana sandwich: slice a banana lengthwise, place on a slice of bread, sprinkle some cinnamon and place another slice of bread on top. Great with a nice cup of coffee or tea!" I am collecting high fiber bread machine recipes and posting them on my favorite site - Recipezaar!

LAURI'S YUMMY NUT BREAD

Lauri's Yummy Nut Bread image

This recipe for nut bread has been handed down from my grandmother and is sooo delicious. It's easy to make and everyone who tries it always asked for the recipe. For best results, mix with a wooden spoon, not with an electric mixer. It will overmix and become tough.

WHEAT 'N YOGURT BREAD FOR BREAD MACHINE

Wheat 'n Yogurt Bread for Bread Machine image

This is my go-to recipe for my bread machine. I make a couple loaves every week. The recipe came in the booklet along with my machine...I wish I could find that booklet but luckily I wrote the recipe down. Since I'm messy with flour, I like to only measure these ingredients occasionally. I like to measure out all the dry ingredients, except the yeast, and store in a gallon-size baggie in the freezer. I make all at once about 6 baggies, so when I want to make a quick loaf before I go to bed, I just have to add the water, yogurt, my baggie of dry ingredients, the butter, and yeast. It's SO convenient.

Categories     Yeast Breads

Time 3h10m

Yield 1 loaf (2 lb), 8 serving(s)

Number Of Ingredients 9

1 1/8 cups water
2/3 cup plain nonfat yogurt
1 1/2 cups bread flour
2 3/4 cups whole wheat flour
2 tablespoons dry milk
2 tablespoons brown sugar
1 1/2 teaspoons salt
2 tablespoons butter (or margarine)
2 1/4 teaspoons active dry yeast (or 2 tsp Bread Machine yeast)

Steps:

  • Follow your breadmaker's instructions regarding how to add ingredients. My breadmaker requests me to do the following:.
  • Add liquids to the bread pan first, then dry. Level the dry; quarter the butter and add to corners. Make an impression in the center of the dry ingredients and add the yeast.
  • If bread collapses during the baking period, next time add 1 or 1 ½ tablespoons vital wheat gluten to the recipe to prevent from happening again.
  • I set my bread maker to 'whole wheat', 'light crust', '2 lb loaf'.

Tips:

  • Choose the Right Nuts: For a flavorful and crunchy nut bread, select high-quality nuts. Walnuts, pecans, and almonds are popular choices, but you can experiment with different types based on your preference.
  • Measure Accurately: Baking relies on precise measurements. Use measuring cups and spoons to ensure the correct proportions of ingredients. This will result in a well-balanced and successful nut bread.
  • Don't Overmix: Overmixing can lead to a dense and tough bread. Mix the batter just until the ingredients are combined. Overmixing develops the gluten in the flour, resulting in a less tender crumb.
  • Toast the Nuts: Toasting nuts enhances their flavor and aroma. Spread them on a baking sheet and toast in a preheated oven for a few minutes, stirring occasionally. This step is optional but highly recommended for a richer taste.
  • Use Fresh Baking Powder: Baking powder is a crucial leavening agent in nut bread. Make sure to use fresh baking powder to ensure proper rising. Old baking powder may not react effectively, resulting in a flat or dense loaf.

Conclusion:

Creating a delicious and wholesome nut bread using an automatic bread maker is a convenient and enjoyable experience. With careful ingredient selection, accurate measurements, and attention to mixing and baking techniques, you'll achieve a moist, flavorful, and nutritious loaf. Experiment with different nut combinations, add-ins like dried fruits or spices, and adjust the sweetness level to suit your taste. Remember, practice makes perfect, so don't be discouraged if your first attempt doesn't turn out as expected. Keep experimenting and refining your technique, and you'll soon be a pro at baking irresistible nut bread in your bread maker.
