3 extra-large eggs
2 teaspoons pure vanilla extract
2 cups grated carrots, unpeeled and grated on a box grater
1 Granny Smith apple, unpeeled and grated on a box grater
1 (8-ounce) can crushed pineapple, drained
1/2 cup pecans, roughly chopped
1/2 cup sweetened shredded coconut
1/2 cup raisins
2 1/4 cups all-purpose flour
1 1/4 cups sugar
1 tablespoon ground cinnamon

1 teaspoon kosher salt

Steps:

  • Preheat the oven to 350 degrees F and arrange two racks evenly spaced in the oven. Line two muffin pans with paper muffin cups.
  • In a large bowl, whisk together the eggs, oil, and vanilla. Add the carrots, apple, pineapple, pecans, coconut, and raisins and stir together. In a medium bowl, sift together the flour, sugar, cinnamon, baking soda, and salt. Add the dry ingredients to the wet ingredients and stir just until combined. Scoop the batter with a standard (2 1/4-inch) ice cream scoop (I use rounded scoops of batter) into the prepared muffin cups. Bake for 30 to 35 minutes, until a toothpick comes out clean. Time 55m

Yield 12 muffins

Number Of Ingredients 13

1 1/3 cups all-purpose flour
3/4 cup sugar
1 1/2 teaspoons baking soda
1 1/2 teaspoons cinnamon
1/3 teaspoon salt
2/3 cup oil
2 eggs
1 1/4 teaspoons vanilla extract
1 1/3 cups grated peeled apples (about 1 large apple)
1/3 cup raisins
1/3 cup flaked coconut
1/3 cup shredded carrot
1/3 cup chopped walnuts (optional)

Steps:

  • Preheat oven to 350 degrees F.
  • Combine in a large bowl flour, sugar, baking soda, salt, and cinnamon.
  • In separate bowl mix oil, eggs and vanilla.
  • Stir wet ingredients into dry until just moistened.
  • Fold in the apples, carrots, raisins, coconut and nuts (if desired).
  • Fill greased or paper lined muffin cups 2/3 full.
  • Bake 25-30 minutes or until a toothpick inserted in center comes out clean.
  • Makes 12 muffins.

Tips:

  • Use ripe bananas: Overripe bananas add natural sweetness and moisture to the muffins, reducing the need for added sugar and butter.
  • Mash bananas thoroughly: Ensure the bananas are mashed until smooth, as any lumps can affect the texture of the muffins.
  • Measure flour correctly: Use the spoon and level method to measure flour to avoid compacting it, which can result in dry muffins.
  • Do not overmix the batter: Overmixing can develop the gluten in the flour, making the muffins tough. Mix just until the ingredients are combined.
  • Fill muffin cups properly: Fill the muffin cups about 2/3 full to allow room for the muffins to rise. Overfilling can cause the muffins to overflow and become misshapen.
  • Bake at the right temperature: Preheat the oven to the correct temperature before baking the muffins. Baking at a lower temperature for a longer time can result in dry muffins.
  • Use fresh or frozen fruit: You can use fresh or frozen berries, such as blueberries, raspberries, or strawberries, in these muffins. If using frozen berries, thaw them before adding them to the batter.
  • Add nuts or seeds: For extra crunch and flavor, add chopped nuts, such as walnuts, pecans, or almonds, or seeds, such as chia seeds or flax seeds, to the batter.
  • Store muffins properly: Store the muffins in an airtight container at room temperature for up to 3 days, or freeze them for up to 3 months.
