Steps:

  • Rinse and sort beans; soak according to package directions., Drain and rinse beans, discarding liquid. Place in a Dutch oven. 60 oz black beans, 4 cans, drained, rinsed
4 cups vegetable stock
1 bay leaf

Steps:

  • Heat olive oil in a large stock-pot or dutch oven over medium-high heat until the oil begins to shimmer.

  • Add garlic, salt, and pepper, and continue to cook for an additional 10 minutes until vegetables are soft and the onions are translucent.

6 cups reduced-sodium chicken broth
4 cups water

1 cup fingerling potatoes, or to taste
1 small red bell pepper, seeded and chopped
4 cups water
1 (19 ounce) can black beans, drained and rinsed
1 (12 fluid ounce) can vegetable juice (such as V8®)
1 (11 ounce) can canned corn (such as Green Giant Niblets®), drained
2 tomatoes, chopped
2 tablespoons chopped green chilies
2 teaspoons ground cumin

Steps:

  • Place ham bone in a large slow cooker.

2 cups chopped carrots
1 cup chopped onion
1-1/2 cups dried great northern beans
5 cups water
1-1/2 pounds smoked ham hocks
2 garlic cloves, minced
2 teaspoons salt
1/2 teaspoon pepper
1/8 to 1/4 teaspoon hot pepper sauce

Steps:

  • In a 5-qt. slow cooker, place parsnips, carrots and onion. Top with beans. Add water, ham, garlic, salt, pepper and hot pepper sauce. Cover and cook on high for 6-7 hours or until beans are tender. , Remove meat and bones from slow cooker. 1 meaty ham bone
2 cups dried split peas
1/2 cup pearl barley
1/2 cup dried black-eyed peas
1/2 cup dried navy beans
2 -4 beef bouillon cubes
1 cup chopped onion
1/2 cup sliced carrot
1/2 cup sliced celery
2 garlic cloves, minced
1/2 teaspoon dried thyme
1/2 teaspoon crushed celery seed
3 bay leaves
salt and pepper

Steps:

  • Combine all ingredients in slow cooker. Cover and cook on low 6-8 hours. Remove ham bone and cut meat into bite sized pieces.
  • Return to soup, discarding bone. Discard bay leaves.

These black beans are delicious. I have made these for years, everyone likes them. I have passed along the recipe to lots of people. I got the recipe out of a PG&E pamphlet (years ago). The recipe is from MUSTARD'S GRILL' in St. Helena CA, the Napa Valley. Prep time does not include soaking the beans.

1 lb black beans
4 1/2 cups water
1/4 lb bacon
5 garlic cloves, minced
2 stalks celery, minced
1 large carrot, peeled and diced
1 medium onion, diced
1 jalapeno pepper, seeded and minced
1 bay leaf
1 tablespoon chili powder
2 teaspoons cumin
1/2-1 teaspoon cayenne pepper
1/2-3/4 teaspoon ground pepper
8 cups chicken broth or 8 cups beef broth
salt

Steps:

  • Soak beans overnight in the water OR bring to boil then let stand for 1 hour; drain.
  • Cook bacon in heavy, large pot over medium heat until golden brown and crisp, stirring frequently, about 5 minutes.
  • Mix in garlic, celery, carrot, onion, jalapeño and bay leaf.
  • Cook until vegetables are tender, stirring occasionally, about 10 minutes.
  • Add chili powder, cumin, cayenne and pepper.
  • Stir until aromatic, about 1 minute.
  • Add beans and broth.
  • Cook at a slow boil until beans are tender and most of the liquid is absorbed, stirring occasionally, about 1 1/2 to 2 hours.
  • I have used more broth to make it a soup.
  • Season with salt.
  • Mustard's serves these beans topped with chopped red onions, a dollop of sour cream and chopped chives.

2 cups navy beans
8 cups water
4 carrots, sliced
3 tablespoons red wine vinegar or 3 tablespoons vegetable stock
2 onions, chopped
5 garlic cloves, minced
1 cup celery leaves, and tender, inner stalks, chopped fine
1 cup cabbage
2 bay leaves
1 (15 ounce) can tomato sauce
1/4 teaspoon ground ginger (powder)
1/2 teaspoon mustard powder
1/2 teaspoon chili powder
1/2 teaspoon black pepper
1/2 teaspoon thyme
1 tablespoon parsley flakes
1/2 teaspoon salt
1 dash Tabasco sauce or 1 dash habanero sauce

Steps:

  • Wash and pick over beans.
  • Cover with water and soak overnight, or quick soak.
  • Discard soaking water, rinse beans and put in a large soup pot.
  • Add the 8 cups of water and bring to a boil.
  • Cover tightly and reduce heat to a low simmer.
  • Add carrots.
  • In a nonstick pan saute onion in balsamic vinegar until it caramelizes (this takes a while on low heat).
  • Add garlic, celery leaves, and cabbage.
  • Continue sautéing, adding more liquid as necessary.
  • When the mixture has cooked down somewhat, add it to the beans.
  • Add tomato sauce, bay leaves, and spices.
  • Simmer *very* slowly for 2 hours or until beans are tender, stirring occasionally.
  • Remove bay leaves and serve with hard bread and salad.

1 meaty ham bone

3 medium red potatoes .. diced about quarter size (cooked seperate ... add to soup before serving)

1 med-lrg onion diced
2/3 cup celery diced
2 tbs lousiana hot sauce (optional)
1 heaping tbs sugar (optional)
1/2 teaspoon garlic powder
salt/pepper to taste

Steps:

  • 1. In large soup pot add water and ham bone ... cook until meat can be removed from bone ... when ham is removed from bone add ham back into broth ... add pinto beans and cook on med-high until beans are near tender ... add remaining ingredients (onions, celery, carrots , hot sauce, sugar, garlic powder ,salt/pepper)continue cooking until desired doneness. Add cooked potatoes to soup before serving.
  • 2. Note: you may need to add more water as you go along .. you be the judge of that.
