I have been making this for years. It comes from Taste of Home. I don't remember the issue but it was quite early. It is also in the 1999 TOH annual cookbook. The aroma while this is baking will drive you insane. This is a great cold weather stew that you will make many times over!

Tips for Hearty Baked Beef Stew:

  • Sear the beef first: Searing the beef before adding it to the stew pot creates a flavorful crust, enhancing the overall taste of the stew.
  • Use a variety of vegetables: Don't limit yourself to just a few veggies; add a variety of root vegetables, leafy greens, and herbs to create a more complex and nutritious stew.
  • Choose a flavorful broth: The broth is the base of the stew, so make sure to use a flavorful one. Options include beef, chicken, or vegetable broth, or even a combination of these.
  • Simmer gently: Beef stew should be cooked low and slow to allow the flavors to meld and the beef to become tender. Simmer the stew for at least an hour, or up to several hours if time allows.
