This recipe was really yummy to start with but I was looking for something a little healthier so I replaced some butter with non-fat yogurt and I eliminated the salt. It is super moist and tastes great.

2 cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
¼ cup butter
⅛ cup nonfat plain yogurt
¾ cup brown sugar
2 eggs, beaten
2 ⅓ cups mashed overripe bananas

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan.
  • Combine flour, baking soda, and salt in a large bowl. Beat butter, yogurt, and brown sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add room-temperature eggs one at a time, allowing each egg to blend into butter mixture before adding the next. Stir in mashed bananas until well blended. Pour banana mixture to flour mixture; stir just to moisten. Transfer batter into prepared loaf pan.
  • Bake in preheated oven until a toothpick inserted into center of loaf comes out clean, 60 to 65 minutes. Let bread cool in pan for 10 minutes, then turn out onto wire rack to cool completely.

2/3 cup sugar
3/4 cup fat-free egg product
1/4 cup fat-free (skim) milk
2 tablespoons vegetable oil
1/2 teaspoon vanilla
3 cups Bisquick Heart Smart™ mix

Steps:

  • Heat oven to 350°F. Spray bottom only of 9x5-inch loaf pan with cooking spray. In large bowl, stir bananas, sugar, egg product, milk, oil and vanilla until blended. Stir in Bisquick mix. Pour into pan.
  • Bake 55 to 60 minutes or until toothpick inserted in center comes out clean.
  • Cool 10 minutes. Run knife or metal spatula around sides of pan to loosen bread; remove from pan to cooling rack. Cool completely, about 1 hour 30 minutes, before slicing.

This is the best Banana Nut Bread I have ever had and it is healthy for you. I used my Bread Maker but next time I am going to try and just bake it in a loaf pan. I am also going to try and use a little bit less sugar. I also used a unbleached white/multi-grain flour which I purchased at Costco. This recipe was adapted from another recipe on Recipezaar to be healthier. It is a good basic recipe that you can alter to create your own.

3/4 cup unbleached all-purpose flour
3/4 cup wheat flour
1/3 cup sugar
1/3 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1/3 cup applesauce (any kind)
2 large eggs, lightly beaten
1/4 cup vanilla yogurt (I used Yoplait low fat)
1 teaspoon vanilla
3/4 cup mashed banana (about 2 or 3 depending on size)
1/3 cup walnuts, finely chopped (or you can use pecans)

Steps:

  • Into baking pan measure flour, sugar, baking powder, soda, salt and cinnamon.
  • Add applesauce, eggs, yogurt, mashed bananas, vanilla and nuts.
  • Insert pan securely into unit; close lid.
  • Select "Quick Bread Cycle" setting (mine has an 85 minute cycle); press Start.
  • The "Complete" light will flash when bread is done.
  • Using hotpads, remove pan from unit and remove bread from pan.
  • Let cool for 10 minutes.
