HEALTHY YUMMY BLUEBERRY BANANA OATMEAL MUFFINS
I created these because I looked all over for a recipe for blueberry banana muffins that were actually healthy. Many had claimed to be this but if you looked at the nutrients for it, they were horrible.

Steps:
- Preheat oven to 350 degrees F and grease or line a muffin pan.
- In a medium bowl, mash bananas with rice syrup, pureed carrot, vanilla and mix well.
- In a small bowl, combine baking soda, flour, and oats. Add to banana mixture and stir by hand until throughly combined. Fold in the blueberries.
- Pour batter into muffin pan and bake for 25 minutes or until toothpick inserted in middle comes out clean.
Tips:
- Use ripe bananas. The riper the bananas, the sweeter and more flavorful your muffins will be. You can use fresh or frozen bananas, but if using frozen, be sure to thaw them completely before mashing.
- Don't overmix the batter. Overmixing can result in tough muffins. Mix just until the ingredients are combined. Stir in the blueberries last, just until they are evenly distributed.
- Use fresh or frozen blueberries. If using frozen blueberries, do not thaw them before adding them to the batter. Frozen blueberries will help to create a moist muffin.
- Bake the muffins until a toothpick inserted into the center comes out clean. The baking time will vary depending on the size of your muffin tins and the type of oven you are using.
Conclusion:
These blueberry banana oatmeal muffins are a delicious and healthy snack or breakfast option. They are easy to make and can be customized to your own liking. Add your favorite mix-ins, such as nuts, seeds, or chocolate chips. Experiment with different flavors of yogurt or milk, or try adding a teaspoon of vanilla extract or cinnamon to the batter. No matter how you make them, these muffins are sure to be a hit!
