SWEET POTATO OATMEAL MUFFINS

Sweet Potato Oatmeal Muffins image

These delicious, moist muffins came from the Practical Produce Cookbook. I played around with some of the ingredients(mainly because I was too lazy to go down in the basement to get the other bag of all-purpose flour) substituting some whole wheat flour and quick oats for some of the all-purpose flour it called for, and using light brown sugar in place of half of the white sugar. This is a kid-pleaser, with or without the topping. The original recipe states it makes 12 regular-sized muffins. I got 36 mini muffins from it.

1 cup mashed, cooked sweet potato
2 large egg whites
½ cup white sugar
¼ cup water
¼ cup unsweetened applesauce
2 tablespoons canola oil

Tips:

  • Use ripe bananas: Ripened bananas provide more natural sweetness and moisture to the muffins, reducing the need for added sugar.
  • Choose rolled oats for a chewy texture: Rolled oats provide a satisfying chewiness to the muffins, while quick oats may result in a denser muffin.
  • Add nuts or seeds for extra crunch: Chopped walnuts, pecans, or flaxseeds add texture and healthy fats to the muffins.
  • Use a combination of spices: A blend of cinnamon, nutmeg, and ginger adds warmth and depth of flavor to the muffins.
  • Do not overmix the batter: Overmixing can result in tough muffins. Gently fold the dry ingredients into the wet ingredients until just combined.
  • Bake at a moderate temperature: A lower oven temperature (350°F) allows the muffins to bake evenly without over-browning.
  • Allow the muffins to cool before serving: This helps them to set and retain their shape.

Conclusion:

These Healthy Sweet Potato Oatmeal Muffins are a delicious and nutritious treat that can be enjoyed for breakfast, lunch, or as a snack. They are packed with wholesome ingredients like sweet potatoes, oats, and bananas, and are naturally sweetened with maple syrup. These muffins are a great way to start your day or refuel after a workout. They are also a great option for meal prep, as they can be made ahead of time and stored in the refrigerator or freezer.
