DANA'S HEALTHY STUFFED SHELLS
I love stuffed shells and these shells are so good, low in fat and a much healthier version than the regular stuffed shells. But don't let that fool you on the taste, they were outstanding and my husband fought me over the leftovers! He won of course! LOL!

Steps:
- 1. In a small bowl mix your tofu, cheese and egg white. Saute the mushrooms, onions and garlic in olive oil until tender, add seasonings. Remove from heat. Add the drained spinach, mix. Mix in the cheese mixture.
- 2. Spoon cheese and veggie mixture into the shells.
- 3. Spray a baking dish with cooking spray, add 1/2 cup of sauce to the bottom, top with your shells, add another 1/2 cup of sauce. You can add more or less of the sauce to suit your own tastes. Top with a little more cheese. Cover with foil and bake at 350° for 35 minutes. You can remove the foil in the last stages of baking if the cheese has not melted completely. Enjoy!
Tips:
- Choose the right pasta shells: Jumbo pasta shells are ideal for stuffing, as they can hold a generous amount of filling and bake evenly.
- Cook the pasta shells al dente: This means cooking them until they are tender but still have a slight bite to them. Overcooked pasta shells will become mushy and fall apart when stuffed.
- Make sure the filling is well-seasoned: The filling is the star of the show in stuffed shells, so make sure it's packed with flavor. Use a combination of herbs, spices, and cheese to create a filling that's both delicious and satisfying.
- Don't overstuff the shells: Overstuffed shells will be difficult to close and may burst open during baking. Fill the shells just until they are full, but not so full that the filling is spilling out.
- Use a good quality sauce: The sauce is what brings the stuffed shells together, so make sure it's flavorful and complements the filling. You can use a simple tomato sauce, a creamy Alfredo sauce, or even a pesto sauce.
- Bake the stuffed shells until they are golden brown: This will ensure that the shells are cooked through and the filling is heated all the way through.
Conclusion:
Healthy stuffed shells are a delicious and versatile dish that can be enjoyed by people of all ages. With a little planning and preparation, you can easily make this dish at home. So next time you're looking for a healthy and satisfying meal, give stuffed shells a try. You won't be disappointed!
