SPICY HERBED SUMMER GAZPACHO

The soup we know as gazpacho originated in Spain's southern region of Andalusia. Farm harvesters traditionally prepared their lunches in the fields by pounding garlic, stale bread, water, olive oil, and salt in a large wooden bowl, forming a sort of nourishing paste to which they added cold water. Legend maintains that Christopher Columbus took barrels of this paste on his first voyage to the New World. Discovering tomatoes, cucumbers, and bell peppers in the Andes, he added them to the mix, creating the liquid salad we still call gazpacho. From "The Florida Keys Cookbook". Prep/Cook time DOES NOT include overnight refrigeration time.

2 cups diced seeded peeled cucumber
1 cup chopped celery
1 cup chopped green onions
1 4-ounce can chopped mild green chilies
3 14 1/2-ounce cans diced tomatoes in juice
1 slice white bread, torn into pieces
1/4 cup olive oil
1/4 cup drained capers
2 tablespoons red wine vinegar
1 tablespoon chili powder
2 garlic cloves

Steps:

  • Place 1 cup cucumber, 1/2 cup celery, 1/2 cup green onions and half of chilies in small bowl and reserve.

Tips:

  • Use ripe, juicy tomatoes: The quality of your tomatoes will greatly impact the flavor of your gazpacho. Choose ripe, in-season tomatoes that are bursting with flavor.
  • Chill your ingredients before blending: This will help to keep your gazpacho cold and refreshing.
  • Don't over-blend your gazpacho: You want your gazpacho to have a bit of texture, so don't over-blend it. A few small chunks of vegetables are perfectly acceptable.
  • Season your gazpacho to taste: Add salt, pepper, and other seasonings to taste until you're happy with the flavor.
  • Serve your gazpacho chilled: Gazpacho is best served chilled, so make sure to refrigerate it for at least 2 hours before serving.
