SESAME COCONUT COOKIES
I had similar cookies from a bake sale and they were delicious. This is an approximate replication - might work with only 2 sticks of butter - they are very buttery!

The recipe for this cookie developed from an idea for coconut halvah which became a need for a tea time treat. Now it's a favourite. The preparation time does not include chilling times.

Tips:
- Use unsweetened coconut flakes. Sweetened coconut flakes will make the cookies too sweet.
- Toast the coconut flakes before using. This will bring out their flavor and make them more fragrant.
- Use a food processor to grind the sesame seeds. This will help to release their oils and make them more flavorful.
- Don't overmix the dough. Overmixing will make the cookies tough.
- Chill the dough for at least 30 minutes before baking. This will help the cookies to hold their shape and prevent them from spreading too much.
- Bake the cookies at a moderate temperature. This will help to prevent them from burning.
- Let the cookies cool completely before serving. This will allow the flavors to develop and the cookies to firm up.
Conclusion:
These healthy sesame coconut cookies are a delicious and nutritious snack that can be enjoyed by people of all ages. They are made with simple, wholesome ingredients and are free of refined sugar, flour, and dairy. They are also a good source of fiber, protein, and healthy fats.
