Categories     Quick Breads

Time 30m

Yield 12 muffins

Number Of Ingredients 11

1 1/4 cups whole wheat flour
1 1/2 cups quick-cooking rolled oats
1/3 cup firmly packed brown sugar
2 teaspoons baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
3/4 cup water
1/4 cup skim milk
1/4 cup oil
1 egg
1/2 cup raisins

Steps:

  • Heat oven to 400 degrees. Grease 12 muffin cups.
  • In mixing bowl, combine all dry ingredients; mix well.
  • In large bowl, combine all wet ingredients; blend well.
  • Stir in dry ingredients, just until moistened. Stir in raisins.
  • Spoon batter into prepared muffin cups, filling 2/3 full.
  • Bake for 15-20 minutes or until toothpick inserted in center comes out clean.
  • Immediately remove from pans.

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your muffins will be.
  • Don't overmix the batter: Overmixing can make the muffins tough. Mix just until the ingredients are combined.
  • Use a muffin liner or spray the muffin tin with cooking spray: This will help prevent the muffins from sticking.
  • Fill the muffin cups about 2/3 full: This will allow the muffins to rise properly without overflowing.
  • Bake the muffins until a toothpick inserted into the center comes out clean: This usually takes about 20-25 minutes.
  • Let the muffins cool in the pan for a few minutes before transferring to a wire rack to cool completely: This will help prevent them from breaking apart.

Conclusion:

These healthy oatmeal raisin cookie muffins are a delicious and nutritious snack or breakfast option. They are made with whole wheat flour, oats, bananas, and raisins, and they are sweetened with honey. They are also low in fat and calories, and they are a good source of fiber and protein.
