- Wash potatoes and cut off any eyes. Do not peel them. Cut them in quarters and place in good sized pot. Fill with enough water to cover potatoes and add salt.
- Bring to a boil, then simmer for 20 - 25 minutes or until tender.
- Drain water and smash the potatoes in the pot with a potato masher.
- Add cream cheese and half the milk and continue to smash with masher. Add egg too if desired (it adds to both the fluffy texture and a nice color).
- Add remaining milk as needed and most of the cheddar cheese. (You might need more milk, depending on your potatoes).
- Add pepper to taste and garnish with remaining cheddar cheese.
Tips:
- Yukon Gold potatoes: These are the best choice for mashed potatoes because they have a smooth, creamy texture and hold their shape well when cooked.
- Russet potatoes: Russets are also a good choice, but they are a bit drier than Yukon Golds. To make them creamier, add more butter or milk.
- Peel the potatoes: Peeling the potatoes will give you a smoother mashed potato. However, you can leave the skin on if you prefer.
- Boil the potatoes: Boiling is the best way to cook potatoes for mashed potatoes. Bring a large pot of salted water to a boil and add the potatoes. Cook until they are tender when pierced with a fork, about 15-20 minutes.
- Drain the potatoes: Drain the potatoes in a colander and let them steam dry for a few minutes.
- Mash the potatoes: There are several ways to mash potatoes. You can use a potato masher, a hand mixer, or a food processor. If you are using a food processor, be careful not to over-process the potatoes, or they will become gluey.
- Add milk and butter: Once the potatoes are mashed, add milk and butter. Start with a small amount and add more until you reach the desired consistency.
- Season the potatoes: Season the mashed potatoes with salt, pepper, and garlic powder. You can also add other herbs and spices, such as chives, parsley, or rosemary.
- Serve the potatoes: Mashed potatoes can be served immediately or kept warm in a slow cooker. They can also be refrigerated for up to 3 days or frozen for up to 3 months.
Conclusion:
Mashed potatoes are a classic comfort food that can be enjoyed by people of all ages. They are easy to make and can be customized to your own taste. Whether you like them creamy or chunky, with or without skins, mashed potatoes are a delicious and versatile dish that is perfect for any occasion.
